An entire meal with only five ingredients and one pan? Yes please! Our One Pan Chicken Fajitas are a busy week-night dream. Throw some diced peppers and onions on a sheet pan, place chicken on top, drizzle with extra virgin olive oil and sprinkle on that flavorful fajita spice! Bake for 30 minutes and dinner is served!
Mexican food is an all-time favorite in the Tucker house. It’s practically a main food group. 🙂 Fajitas were something we would have to schedule out because time was an issue. Well, not anymore! What I love about this recipe is that I can throw all of this in the oven and walk away for 30 minutes to do other things. When the timer goes off, all that is required is a rough chop of chicken, place in a tortilla, and dinner is served!
What are good toppings for fajitas?
So many things are amazing for topping fajitas. The number one go-to is cheese. We prefer Monterey Jack or a pepper jack to add some extra spice. Other great toppers include salsa, sour cream, lettuce, tomatoes, queso, black olives and guacamole. We love to top off our fajitas with some rough-chopped cilantro.
Ingredients for our One Pan Chicken Fajitas:
- Bell Peppers: 1 green, 1 red, 1 Yellow
- 1 Sweet Onion, Medium
- 1 Packet of Fajita Seasoning
- 2 LBS chicken tenderloins
How to make:
Preheat the oven to 350 F. Grease a baking sheet and set aside.
Wash and slice all three peppers into strips. Next, cut the onion into thin slices.
Lay the vegetables out on the baking sheet in an even layer. Next, wash and pat dry the chicken tenders. Place them on top of the veggies.
Drizzle the olive oil evenly over all the ingredients. Sprinkle the fajita seasoning last.
Place in the oven and bake for 30 minutes. When the timer goes off, take out of the oven.
Quickly chop the chicken into strips and serve on a tortilla! Top with your favorite fajita enhancers!
I’m sure I’ve said it before but the best part of this recipe is how simple it is to put together! AND you don’t have to sacrifice taste for simplicity either. Our One Pan Chicken Fajitas can feed up to six people with minimal effort but with maximum satisfaction. My husband loves it too when we have some leftovers and he makes an egg burrito to following breakfast! We make it a meal with our Roasted Street Corn Salad! - 1 Green Pepper
- 1 Red Pepper
- 1 Yellow Pepper
- 1.5lbs chicken breast
- Fajita Seasoning
- Olive Oil
- Preheat the oven to 350 F.
- Grease baking sheet.
- Place all vegetables, cut in strips, on sheet.
- Next, top with chicken tenderloins.
- Drizzle with olive oil and sprinkle fajita seasoning overtop.
- Bake for 30 minutes.
- Slice chicken into strips and serve on a tortilla with all ingredients.
