Spicy Brunch Casserole

Brunch Casserole anyone?? When someone says brunch, my response is always “When?” It’s my favorite meal! We came up with this Spicy Brunch Casserole because we were hosting a gathering on a lazy Sunday and wanted to spice things up but also keep it simple! We layer hot sausage, green chiles, cheese, and a delicious egg mixture. All thats left is to bake and dig in!

Spice averse?? Fear not… it’s not nearly as spicy as it sounds because the wet ingredients help bring it down just a notch. I can 100% attest to the fact that this spice is probably on a level 4 out of 10. I honestly made it expecting a BAM- in your face type of heat, but it wasn’t AT ALL! The spice is there, but its not overbearing and it really lends to a great flavor. This is a fantastic addition to any breakfast/brunch gathering you have coming up!

Can I make this egg casserole ahead of time?

Absolutely! Sometimes brunch can be an undertaking, especially if you have a lot of people showing up. The beauty of this particular dish is that you can make it up to 48 hours in advance and let it sit in the refrigerator until you are ready to bake! Easy-peasy.

What time is brunch typically served?

Brunch originated to take the place of two meals (breakfast and lunch) and combine them. The typical window for brunch is between 9am and 2 pm. In our household, we most always partake in brunch around 10:45 because that spans the two different meals perfectly for us. So by the time we are done eating, we aren’t hungry until dinner time. Brunch usually takes a little longer than breakfast and more socializing happens for us 🙂

Ingredients for our Spicy Brunch Casserole

Ingredients for our Spicy Brunch Casserole:

  • 1 lb lean, hot sausage
  • Green chiles (4oz each) drained
  • Cheddar cheese
  • Monterey jack cheese
  • Eggs
  • Milk
  • Flour

How to make our Spicy Brunch Casserole:

Preheat oven to 350 F.

First, you will want to brown sausage and drain.

Once the sausage is browned, drain as much of the grease off as you can. In a 9×13, layer sausage the sausage evenly.

Next, layer the three cans of chiles all over the sausage. I usually just evenly shake the chiles out once I have drained them.

In a separate bowl, combine all the eggs, milk, and flour until well blended. Pour egg mixture over all of the layered ingredients.

Bake at 350F for 40-45 minutes. You can easily check to see if the casserole is done by inserting a toothpick. If it comes out dry, it’s done! If it comes out wet, keep baking for another 5 minutes before checking again.

Ingredients

  • 1 lb lean, hot sausage
  • 3 cans green chiles (4oz each) drained
  • 1 lb Cheddar cheese
  • 1 1/4 lb monterey jack cheese
  • 9 eggs, beaten
  • 1 Cup Milk
  • 2 TBSP flour

Instructions

    1. Preheat oven to 350 F.
    2. Brown sausage and drain.
    3. In a 9x13, layer sausage, chiles, and then the chess.
    4. Combine eggs, milk, and flour until well blended.
    5. Pour liquid over layered mixture.
    6. Bake at 350F for 40-45 minutes.
    7. Slice and serve.
