Skillet Italian Chicken

Need a super easy chicken dish for dinner tonight??! This Skillet Italian Chicken is simple to make and has only 4 ingredients! Diced chicken is marinated in a delicious mixture of olive oil, lemon juice, and Italian seasonings for a great and easy main course. It is so versatile that it can pair with just about anything: veggies, pasta, potatoes, salads… the list goes on forever!

I’m not going to lie… the most common form of a chicken bite in our house usually comes from the great Chick Fil A. I had an abundance of chicken breast this week because my local grocery store had BOGO going on. This recipe is great because I made it and was able to pair it with two different dinners. First, I threw it in the Instant Pot and made it with my Chicken Alfredo. Next, I just used it as the main course alone, alongside some jasmine rice and steamed squash. It was great to take this one recipe and incorporate it into a few I already had up my sleeve!

How long do you pan fry chicken bites?

The time you pan fry chicken will vary based a few factors: the heat you are using, the amount of chicken, and the thickness of the chicken. For this particular recipe, the chicken will need to be cooked over medium heat for 8-10 minutes. For thicken pieces, I recommend that you take the heat to medium-low and cover while cooking. This helps keep the chicken moist and the top traps some of the moisture and flavors for a great final product.

Can I bake this chicken instead?

Yes! If pan-frying is not your thing, no problem! I recommend baking the chicken, uncovered, at 400 F for 15-20 minutes. Be sure the internal temperature of the chicken is 165 F. Another good test to use when deciding if your chicken is cooked is to cut through the center of a piece; if the liquid/juices are clear, you are good to go. If they are pink or even a little pink, you need to cook the chicken longer.

Ingredients for our Skillet Italian Chicken:

  • Chicken Breasts
  • Olive oil
  • Lemon juice
  • Italian seasoning
  • Parsley

How to make our Skillet Italian Chicken:

First, cut the chicken breast into bite-sized. Remember that the chicken will shrink some as it cooks, so be mindfully of the size you go with.

Raw chicken, cut into bite-sized pieces, in a clear mixing bowl.

Next, add the the raw chicken to a mixing bowl and add the rest of the ingredients: lemon juice, olive oil, and Italian seasoning. Give them a really good stir. Cover with plastic wrap and allow to marinate for at least 30 minutes. I try for 2 hours if time allows!

Heat a skillet over medium heat. Once heated for 3-4 minutes, place an even layer of chicken in the skillet and cook for 4 minutes on each side. You should get nice brown cook marks on each side, and the internal temperature should be no less than 165 F. Once all chicken is done cooking, garnish with fresh parsley and serve!

*You can always sprinkle a little more seasoning on the chicken if you feel it could use a little more zest. Everyone’s tastebuds vary so go with what you are your family love!

Sometimes you just need a quick and simple way to dress up chicken that doesn’t take a ton of time or brain-space. This answers the question to “What’s for dinner?” in a tasty and easy way that’ll make both you and the family happy. These chicken bites are wonderfully paired with a great Homemade Mac and Cheese, Loaded Potato Bites, or even a Spinach Walnut Salad! These little guys are versatile and can go with whatever you already had on the menu!

Skillet Italian Chicken Bites

Cook Time: 10 minutes
Total Time: 40 minutes

Ingredients

  • 4 Chicken Breasts (about 2 pounds)
  • 3 teaspoons olive oil
  • 1 tablespoon lemon juice
  • 3 teaspoons Italian seasoning
  • Fresh parsley to garnish

Instructions

  1. Cute raw chicken into bite-sized pieces.
  2. Add chicken to a mixing bowl and add 1 tablespoon of lemon juice, 3 teaspoons of olive oil, and 3 teaspoons of Italian seasoning.
  3. Mix and cover. Allow to marinate at least 30 minutes.
  4. Heat a skillet, preferably cast iron, over medium heat. Add the chicken to skillet in an even layer to allow for even cooking. Multiple layers may be necessary.
  5. Cook for 4-5 minutes and then flip the chicken. Cook for an additional 4-5 minutes.
  6. Once all chicken is cooked to an internal temperature of 165 F, garnish with fresh parsley and serve!

Notes

You can always add more of any of the ingredients if it suits your taste! Less is more so start with the recommended amount and work your way up from there. Enjoy!
