Loaded Potato Bites

These Loaded Potato Bites are a simple and delicious addition to any meal! Using ingredients you probably already have around the house, you can easily make these amazing bites any night of the week. I especially love this side dish because the kids can help me throw these together! Also, who doesn’t love miniature sized food?!?!

Sometimes I don’t want all of the carbs of an entire baked potato, so putting a couple of these on my dinner plate gives me that taste I am craving with a lot less guilt! Another great reason to love this dish- it can also make an amazing appetizer or plate to bring to parties and gatherings! Not to mention, anytime bacon is an ingredient, you know it will taste good. A total win all around!

What should I serve with Loaded Potato Bites?

The fun thing about this recipe is you can serve them beside a delicious steak, flavorful apple butter chicken, or even our 3 ingredient pork chops, or you can treat them like an appetizer and serve them on their own with your favorite party foods! Just like a Reese’s cup, there’s no wrong way to eat them!

What other toppings could I add to these potatoes?

We made these loaded potato bites using traditional baked potato toppings. You can add anything you like to make these your own! Some ingredients we would suggest are:

  • Broccoli and Cheese
  • Chili
  • Onions
  • Salsa
  • Taco Meat

Can I save the leftovers?

Absolutely! We recommend that if you plan to save any extras (if there are any!) just simply leave off the sour cream and place them in a covered container in the refrigerator. When you are ready to re-serve, either pop them in a warm oven for a few minutes or a microwave for 30 seconds and then add your sour cream! My daughter especially loves these packed in a thermos in her lunchbox!

Ingredients for Loaded Potato Bites

  • 1 bag Baby Dutch Potatoes
  • 1/2 cup Bacon, chopped (about 4 slices)
  • 1/2 Shredded Cheddar Cheese
  • 1/3 stick of Butter
  • 1/3 cup Sour Cream

How to make our Loaded Potato Bites

Preheat oven to 400. Wash and dry potatoes. Place potatoes on lined cookie sheet and bake for 20-25 minutes.

While the potatoes are cooking, prepare your bacon according to package instructions. If you want to make the prep work a little easier, try this fully cooked bacon that just needs a few seconds in the microwave!

Once potatoes are baked, using a fork, smash and add 1 tsp butter to each potato.

Next, add 1 TBS shredded cheddar cheese and 1 tsp of bacon to top of potato and place back in the oven for an additional 2-3 minutes (to melt the butter cheese).

Remove from oven and add a dollop of sour cream to each potato. Feel free to garnish with green onions or salt and pepper.

Serve immediately and enjoy!

  • 1 bag Baby Dutch Potatoes
