A variation of this recipe was shared with me by my dear friend Julie who you can always count on for a delicious meal. This was one of her “go-to’s” and I was sure to never miss dinner at her house when this was on the menu! Over the years, I have tweaked things slightly (mainly because I could never remember how to make her exact recipe!) but this has also become a staple in our house. This is also a great protein to serve to accommodate different meal plans within the family? No carb- no prob! Make a salad! Picky eater- make it a taco! Everyone wins! 🥗 🌮 😉
What goes well with lime chicken?
We serve this chicken so many different ways! You can put it in a taco shell or tortilla with your normal taco toppings, add it to a salad, or even on its own with yellow rice and black beans. Another great idea is to top this delicious chicken with our easy mango salsa.
Can I marinate the chicken in this lime and red wine vinegar mixture?
Because of the high acidity level of this mixture, we do not recommend using this as a true marinade. The citrus will “cook” the chicken like a ceviche, and we don’t think that would turn out very good 🥴 The chicken needs to cook for a few minutes before adding the sauce to maintain this delicious flavor and texture.
Can I freeze Fiesta Lime Chicken?
Sure! You can make this chicken in a large batch and freeze the chicken you want to save for later. Just make the recipe like normal, allow it to completely cool and then store it in a freezer safe container until you are ready to enjoy!
Ingredients for our Mexican Lime Chicken
- Chicken Breasts
- Fresh Lime Juice
- Red Wine Vinegar
- Minced Garlic
- Salt and Pepper
How to make our Mexican Lime Chicken:
Dice chicken into bite sized pieces. Place in saute pan and cook on medium heat for about 15 minutes.
While chicken is cooking, add remaining ingredients to a bowl and stir. Once chicken has cooked for about 15 minutes, pour mixture into pan. The chicken will not be fully cooked at this time-it should still be pink in areas and not ready to eat.
Continue cooking for 10-15 minutes, or until chicken is fully cooked, stirring often. Remove from heat and serve as desired.
This Fiesta Lime Chicken is super easy to throw together and tastes even better as leftovers- after the flavors have soaked in overnight! You can use this chicken for so many different dinner ideas, you can make it again and again and your family will never get tired of it! - 1 lime, juiced
- 2 tsp. sugar
- 3-4 garlic cloves, minced
- 2 teaspoons of both salt and pepper
