The ingredients for traditional taco seasoning are all typically the same, with some having slightly different ratios of each ingredients. Our Homemade Taco Seasoning is made up of : 2 tablespoons Chili Powder, 2 teaspoons ground cumin, 1 1/2 teaspoons garlic powder, 1/2 teaspoon onion powder, 1 teaspoon dried oregano, 1/4 teaspoon paprika, 1 teaspoon sea salt, and 1/4 teaspoon cayenne pepper. Mix it all up and even double and triple it! Delicious, easy, and a great pantry-staple.

Ingredients for our Mexican Corn Chicken Bake:

  • Chicken Breast
  • Corn
  • Cream Cheese
  • Taco Seasoning
  • Green Chiles
  • Cheddar Cheese
  • Cilantro

How to make our Mexican Corn Chicken Bake:

Preheat the oven to 375 F. In a greased 9×13 baking dish, place the thin-sliced chicken breast in one even layer, trying to keep the meat from laying on top of each other. This helps with even cooking.

In a medium-sized mixing bowl, combine the green chiles, diced cilantro, cheddar cheese, taco seasoning, corn, and cream cheese.

  • If the cream cheese is cold, soften in the microwave for 45 seconds. You will want to completely mix all the ingredients and cold cream cheese makes that super difficult!

Once mixture is completely combined, even spread it over the chicken breasts. Place in the oven, uncovered, and bake for 40 minutes or until chicken reaches an internal temperature of 165 F.

Remove from oven and serve! Garnish with extra cilantro and shredded cheese if desired!

This Mexican Corn Chicken Bake is an easy chicken breast recipe filled with thin-sliced chicken breast, creamy cream cheese, zesty green chiles, sweet corn, and taco seasoning all in a one cheesy chicken dish.

Ingredients

  • 4 thin-sliced chicken breasts about 1 pound
  • 1 (8 ounce) block of cream cheese
  • 1 Packet of Taco Seasoning
  • 1 (4 ounce) can green chiles
  • 1/4 Cup diced Cilantro
  • 1 Cup shredded Cheddar Cheese
  • 1 Can of Corn, drained

Instructions

  1. Preheat oven to 375 F.
  2. Place thin-cut chicken breasts in a greased 9x13 baking dish, trying not to overlap the meat.
  3. In a medium mixing bowl, combine the softened cream cheese, cilantro, shredded cheese, corn, green chiles and taco seasoning.
  4. Mix thoroughly.
  5. Evenly spread the mixture over the chicken.
  6. Bake for 40 minutes, or until chicken reaches an internal temperature of at least 165 F.
  7. Serve and enjoy!
