Healthy Stuffed Peppers Skillet

All the great tastes of a gourmet stuffed pepper but only half the work! Our Healthy Stuffed Peppers Skillet is a one dish dinner that takes less than 30 minutes to make and tastes delicious. We substitute in riced cauliflower to make this a super healthy recipe and the best part is is that you’d never know how healthy this actually is!

My mom always made stuffed peppers when I was growing up. It took a lot of prep… boiling the peppers to make them nice and soft, then putting all the ingredients inside, baking, etc. This skillet dish takes all that prep work out! Everything is cooked in one dish and dinner is whipped up in a jiffy. My kids devoured it and never realized they were eating something super healthy! This baby is on the monthly rotation in our house for dinner from here on out!

Do I have to use ground beef?

Not at all! You can substitute any ground meat that you choose. We just suggest using a meat that is lean. The reason for this is because the fattier the meat is, the more liquid/grease comes off of it and can make the final meal a little more watery than desired. If you don’t have lean meat, be sure to thoroughly drain the meat after browning.

Does the rice cauliflower get mushy?

When following the recipe instructions, the riced cauliflower comes out great! It is not mushy at all and has a great texture which makes it a perfect substitute to rice. It’s such a great healthy addition to an old favorite and helps make this dinner super guilt-free!

  • Ground Beef
  • Diced Tomatoes, canned
  • Colby Jack Cheese
  • Riced Cauliflower
  • Worcestershire Sauce
  • Red Onion
  • Orange and Green Bell Peppers

How to make our Healthy Stuffed Peppers Skillet:

In a skillet heated to medium heat, brown ground beef until completely cooked and no red is visible; this typically takes about 10 minutes. While the beef is browning, dice all peppers into bite-sized pieces. Dice the onion very finely as well.

Once the meat is done cooking, add all the peppers and the onion to the meat mixture. Cook on medium for 6-7 minutes, until the peppers are tender. Stir every few minutes to evenly distribute heat.

While the peppers are cooking, open and drain the diced tomatoes. You want to remove as much of the liquid as possible so the dish doesn’t end up soupy.

*I pour the canned tomatoes into a strainer and set it over a bowl while the meat browns. This ensures that as much liquid is gone as possible.

After 7 minutes, add in the bag of rice cauliflower, dice tomatoes and Worcestershire sauce. Mix and stir completely. Cook for an additional 3 minutes. Don’t over cook – you don’t want to the cauliflower to get too soft.

Top with cheese and pop under the broiler at 500 F for about 2-3 minutes, until nice and melted. Don’t leave too long and watch it constantly! Every oven is different and broiler times vary!

Remove from oven and serve! Garnish with fresh oregano or basil for a little extra flavors if you want.

If cauliflower is just not your thing – no worries! Substitute the riced cauliflower for any COOKED rice that you desire: brown, jasmine, basmati, etc. It doesn’t change the flavor at all. This dish has a good amount of versatility which makes it a crowd favorite!

Ingredients

  • 1 1/2 pounds of lean ground beef
  • 2- 14.5 oz cans of diced tomatoes, well drained
  • 1 1/2 cups bell peppers, chopped: we used 1 orange and 1 green
  • 12 ounce bag of riced Cauliflower
  • 2 cup shredded cheese
  • 1/4 cup red onions, chopped
  • 2 teaspoons Worcestershire sauce

Instructions

  1. Turn burner onto medium heat and brown ground beef.
  2. While meat is cooking, cut up bell peppers into bite-sized pieces.
  3. Dice red onion as well.
  4. When meat is done, about 10 minutes, add diced onions and bell peppers. Cook for 6-7 minutes.
  5. Once peppers are soft, add in the cauliflower, Worcestershire sauce, and drained tomatoes. Mix and return to heat for 3 minutes.
  6. Turn broiler on in oven to 500 F. After the mixture has cooked the additional 3 minutes, top with shredded cheese and place under the broiler for 2 minutes until cheese is melted and bubbly.
  7. Remove from oven and serve!
