A lot of recipes we come up with are either because we research the stew out of new concepts, it’s something we have always made since as far back as we can remember, or because we needed to throw something together with what we had on hand. This recipe was Option #3. I wanted a healthier dinner and needed to use what I had on hand. And let me tell you… I’m not upset about it at all! This dish is simple and there is only ONE pan to clean at the end of it! Crazy that something this pretty and yummy has such minimal clean up. It’s filling and flavorful too so it’s soon to be a recipe we file away as Options #1.
What is a zoodle?
Zoodles = zucchini noodles. ‘Zoodles’ are an incredibly fresh and healthy alternative to pasta. They are a fun way to increase the number of vegetables we eat, especially in our kiddos. I will shoot you straight… they will never be mistaken for pasta. However, when made with the right ingredients and cooked correctly, no one will miss the pasta when eating these! I have two different tools for making zoodles: this hand-held one and this Kitchen Aide attachment. Both are great and my kids espcially love using the hand-held one to help make dinner!
Do you eat zoodles cooked or raw?
You can absolutely eat them both ways! For this specific recipe, we cook them for 3-4 minutes. However, you can eat them fresh out of the fridge with a lemon vinaigrette, tossed on top of a salad you’re eating, or plain if you desire. They have a nice crispy, crunch when raw and are really healthy for you!

Ingredients for our One Pan Chicken Zoodles:
- Cherry tomatoes
- 1 pound boneless skinless chicken breasts
- 1 Packet of Italian Seasonings
- Zucchini, sliced into noodles
- Basil pesto
How to make our One Pan Chicken Zoodles:
The first step is to heat a skillet on medium heat and add all tomatoes. You do not need any oil or butter – just the tomatoes! Roast, moving them about frequently for even cooking, for about 7 minutes. Remove and set aside.

While the tomatoes are cooking, this is a good time to turn your zucchini into zoodles. The handheld ‘zoodler’ below is awesome! It’s so simple and safe that a lot of time my, 8 year pitches in to help. She thinks its fun! If you bought the pre-sliced zoodles, just skip to the next step.

While skillet is still set to medium heat, season both sides of chicken breast with Italian seasoning and place in pan. The residue left from the tomatoes is great for cooking the chicken in! Cook for approximately 4 minutes on each side, until juice run clear or internal temperature is 165 F. Remove chicken and dice or shred into bite-sized piece.

Next, place zoodles in the pan and cook for 2 minutes, stirring constantly. As you stir, the zoodles will absorb some of the cooking flavors from the chicken and the tomatoes.

Next, add the charred tomatoes and diced chicken to the zoodles and stir for about 1 minute. If everything is mixed fairly well before adding the pesto, the sauce distribution is much better.

Last, add 1/2 cup of pesto and stir until thoroughly combined. Remove from heat and enjoy. You can always add more pesto if you want, but we find the 1/2 cup is perfect with all the flavors that are already present.

Zoodles are probably one of my favorite things to cook with. They always make a dish look so pretty but they also taste wonderful. I love that they have a subtle flavor so that whatever I pair it with stands out the most. This dish packs the veggies and the protein so I find I don’t really need anything else for a filling meal. It’s so great to be made all in one dish so that clean-up is quick and I can move quickly onto dessert 🙂 I could really go for that Sopapilla Cheesecake right about now…

One Pan Chicken Zoodles
Ingredients
- 1 pint cherry tomatoes
- 1 pound boneless, skinless chicken breasts
- 1 Packet of Italian Seasoning
- 4 medium zucchini, sliced into noodles
- 1/2 cup basil pesto
