Grilled cheese sandwiches were always a very common item on our weekly menu. It’s also something our kids always want… my husband, not so much. I can’t say I disagree with him either. It made sense to create something that could make the whole family happy by just altering a few ingredients instead of getting rid of the whole concept! Thats how we came up with our “grown up” version of the grilled cheese. It packs a little heat, has a great twist with the pimento, and who can resist bacon?? Pair it with our Fire Roasted Tomato Soup and you have a solid meal tonight!
What’s a good side dish for grilled cheese?
The most obvious answer for us is tomato soup! This is the most popular grilled cheese side and our personal favorite! You can also have it with a side salad to lighten things up a bit! Then there is the always traditional side of French Fries- enough said!
What is Pimento Cheese?
Made popular in southern United States, pimento cheese is a spread or relish made with cheese, mayonnaise and pimentos. It is usually served on crackers, vegetables, bread, or even in sandwiches. It can also be a great topping to steaks!
Where do I find pimento cheese in the store?
Great question! It really depends on your store but here are some places to look if you are having trouble finding it- it will always be refrigerated, so that should help narrow down things a bit! Dairy/Cheese case- this would be the first place I would look. Specialty cheese area- usually somewhere around the deli counter. Look for the hummus and other dips and hopefully you may find it there! If you prefer, we love this recipe if you want to make your own!
Ingredients for our Ultimate Grilled Cheese with Bacon:
- 8 Slices of your Favorite Loaf Bread
- 1 cup Pimento Cheese
- 1 jar Hot Pepper Bacon Jam
- Butter or Spread
How to make our Ultimate Grilled Cheese with Bacon:
Spread your butter or oil over the exterior pieces of your bread, just like a traditional grilled cheese sandwich!
Next, spread a layer of Hot Pepper Bacon jelly along the interior of each side of the bread. The more you use, the more spice and bold flavor you will get. We don’t think you can ever over do this part 🙂
Top the bottom slice of bread with a healthy helping of pimento cheese. We use approximately 1/4 to 1/3 cup. This allows for a full and filling sandwich!
Place your sandwich on a skillet and cook on medium heat. We typically need 3-4 minutes per side. Put slight pressure on the sandwich with a spatula as it cooks. It helps to meld all the flavors are everything heats and melts. Don’t push too hard though!
There is a lot to be said about comfort food. Mixing grilled cheese and bacon is a total comfort win for me. Two of my favorite things come together and create a gooey goodness you will not regret! Simple to make with minimal ingredients makes this twist on a grilled cheese a total home run.
Ultimate Grilled Cheese with Bacon
Ingredients
- 8 Slices of your Favorite Loaf Bread
- 1 cup Pimento Cheese
- 1 jar Hot Pepper Bacon Jam
- Butter or Spread
Instructions
- Spread a thin layer of butter or spread on one side of each slice of bread.
- On the opposite side of each slice, spread about 1/2 tablespoon of hot pepper bacon jam on the bread.
- Place 1/4 cup of pimento cheese on one side of the sandwich and top with other slice.
- Place on heated griddle or frying pan on medium heat.
- Cook on each side for 3-4 minutes, or until butter turns golden brown and cheese is starting to melt and ooze.
- Enjoy alone or with our delicious tomato soup!
