What is the secret ingredient?!

When I was newly married, I rarely made chicken salad because I always felt that it was a lot of work for little reward. I hated having to dice the ingredients AND cook the chicken, wait for it to cool and then shred and mix with everything else. Well, fear no more! The best trick I have come up with is using a Sam’s Club rotisserie chicken instead. It is what puts the simple in our chicken salad title and adds to the overall flavor of the dish.

  • 1 Sam’s Club Rotisserie Chicken
  • 1/2 C Mayonnaise
  • 2 C Diced Celery
  • 2 C Diced Grapes
  • 1/4 C Sweet Relish
  • 1/4 C Diced Pickles

How long does chicken salad last?

When properly stored, chicken salad will last anywhere from 3 to 5 days in your refrigerator. You should throw out your chicken salad if it is left out for more than 2 hours at room temperature. A great rule of thumb for recipes that include mayonnaise is to keep it chilled at all times to eliminate the risk of it spoiling.

Can you freeze rotisserie chicken salad?

You can’t freeze the chicken salad unfortunately, however you can freeze the chicken! The first step to choosing a rotisserie chicken is grabbing a container that is hot to the touch. If you don’t use the entire chicken, freeze leftovers in a zip-lock freezer bag up to four months. A strategy we try to use is stocking up on chickens when they are on sale! Freeze them and keep on hand to jump-start dinner. Our closest Sam’s Club is over 30 minutes away and I don’t always get there on a weekly basis. I buy 2-3 at a time and portion them into bags and toss in the freezer for later!

Why should I use both pickles and relish?

Sweet and salty! When making chicken salad, we wanted to balance the sweet with the salty. Always make sure to use a sweet relish to give it a naturally sweet effect in every bite. Next, add small, diced pieces of pickle because it offers a slight crunch and is a natural salting agent. We find the two combined make the chicken salad that much better!

How to Prepare Chicken Salad:

First, pull as much of the chicken off the bones as you can. We find it easiest to do this when the chicken is still warm.

Dice the chicken and add to a large mixing bowl.

Next wash, dry, and dice the celery into to small bite-sized pieces. Add to bowl.

Then dice the pickles into tiny pieces and add to chicken and celery.

Wash and dry the grapes. Cut in half and add to the rest of the ingredients. (If using large grapes, I cut into 1/4ths.)

Stir to combine ingredients.

Lastly, add the mayonnaise to the mixture slowly. We recommend adding a tablespoon at a time. Some prefer more or less and you never want to over do the mayo!

Serve on a croissant!

Fun Fact: This salad gets better over time! As the ingredients continue to blend over a few hours, the taste is perfection!

This is our favorite dish to make when we know we are going to be on the boat or have a long week ahead with sports and being in the car. It is easy to throw into a Tupperware and put in our cooler, then spoon into a croissant when hungry. A great alternative to a croissant if watching your waistline is pita bread! It is delicious and holds the salad mixture in perfectly for when eating in the car or on the sidelines of a game!

What should I serve with Sam’s Club Rotisserie Chicken Salad

Potato chips are always easy and delicious if you aren’t concerned with calories, or a simple salad like our Bacon Broccoli Salad if you are. You can chop up a variety of vegetables: tomatoes, red onion, cucumber, bell pepper, and fennel, season them with salt, pepper, sliced garlic, and fresh basil. We have found that we don’t add anything extra to the salad itself because the flavor and texture are already perfect.

This recipe makes a surprising large amount. It can feed up to 10 people, depending on your portioning. So whether or not you are entertaining a big group or just looking for something new for your immediate family, this dish goes a long way and is always a people pleaser.

Ingredients

  • 1 Sam's Club Rotisserie Chicken
  • 1/2 C Mayonnaise
  • 2 C Diced Celery
  • 2 C Diced Grapes
  • 1/4 C Sweet Relish
  • 1/4 C Diced Pickles

Instructions

  1. Pull the chicken off of the bones from the rotisserie and place on a cutting board.
  2. Dice the chicken and add to a large mixing bowl.
  3. Dice celery and pickles and add to mixing bowl.
  4. Slice Grapes in half or quarters (your choice) and place in bowl.
  5. Gently stir ingredients together until well mixed.
  6. Stir in mayo.
  7. Serve on croissant or your favorite bread.
  8. Refrigerate remaining chicken salad and store for up to 1 week.
