There is nothing better than a recipe that you can just toss a bunch of ingredients into a bowl and throw it in the oven! This Pineapple Jerk Chicken Bake is exactly that! It is going to be the easiest and best tasting dinner you will make all week!

Pineapple Jerk Chicken Bake

This dish has been in the “rotation” for our family for years now. Anytime I make something that the whole family loves, you will hear “add it to the rotation” come out of my husbands mouth at the dinner table! This makes me so happy to hear because it can be tough to make a dish that everyone is excited about! When you find one, don’t let it go! And when it is as easy as this one is to make, make that your own little secret! 😉

Is jerk chicken spicy?

I think it depends on who you ask! I personally think it has a sweet heat flavor, but it definitely does have some spiciness to it. The heat is not overwhelming. Our kids love this dish! If you are someone that does not like any spiciness to your food, just leave out the red pepper flakes and add a little more brown sugar and pineapple juice to the mixture. We serve ours with a side of fresh pineapple chunks to balance the heat for the kids!

What does jerk chicken taste like?

Jerk seasoning is a cooking style made popular in Jamaica. It gives the meat, usually chicken or pork, a smoky, spicy flavor. Traditionally, the style of jerk cooking is done on the grill. For this recipe, we decided to put a twist on a classic flavor.

What should I serve with Pineapple Jerk Chicken?

Our favorite way to eat this dish is over a scoop of rice! Pour a little pineapple juice into the cooked rice for added flavor! You can also serve it over pasta or over a bed of shredded cabbage.

  • Boneless Skinless Chicken breasts or tenderloins
  • Crushed Pineapple
  • Unsweetened Coconut
  • Brown Sugar
  • Jerk Seasoning
  • Chili Powder
  • Ground Cinnamon
  • Crushed Red Pepper

How to make our Pineapple Jerk Chicken Bake:

Cut chicken into 1 inch pieces and place in an oven safe bowl.

Cut chicken and spices in 2 bowls

In a separate, medium sized bowl, combine all other ingredients and stir well.

Pour mixture over chicken and stir to coat the chicken completely.

Bake in the oven at 350 for 30-35 minutes.

Serve in a bowl or plate. Cover any remaining leftovers and keep in refrigerator for up to a week.

Ingredients

  • 1 lb. Boneless, skinless chicken breasts (or tenderloins)
  • 1 20oz can Crushed pineapple
  • 1/3 cup brown sugar
  • 2 tsp Jerk seasoning
  • 1 tsp ground cinnamon
  • 1 tsp chili powder
  • 3/4 tsp red pepper flakes (optional)
  • 1/2 cup unsweetened coconut

Instructions

    1. Preheat oven to 350.
    2. Cut chicken into 1 inch pieces and place in an oven safe bowl.
