Guacamole Chicken Salad

Delicious, colorful, and mayonnaise-free! Our Guacamole Chicken Salad hits it out of the park with taste and the ease of throwing it together. The creamy avocados and the hint of cumin bring this chicken salad to the next level. For all those mayo-haters (or avocado lovers) this one is for you!

We love bringing chicken salad to a lot of our outings and gatherings. It’s easy to throw in a pita-pocket or just eat with chips. Avocados do tend to turn brown as they sit out being exposed to air–Fear not! Even when they start to turn and look a little off-color, it is still safe to eat. This version of chicken salad can last 24 hours from the time you make it to when it’ll need to be tossed. Our recipe offers about 6 servings so the likelihood of having leftovers is slim 😉

How long can guacamole sit out?

Guacamole is safe to be left unrefrigerated for approximately two hours. If temperatures are above 90 degrees, only one hour is recommended for safe consumption.

Can you cook an avocado?

Avocados are most often eaten raw, chopped up in a salad, spread on toast or mashed into guacamole. You can bake or even grill avocados! Do not, however, microwave your avocados or put them in the oven to try to ripen them faster. Doing this will make the flesh soften a little and while it may “feel” ripe, it isn’t. The avocado won’t have the creaminess nor the buttery, nutty flavor it is known for and will still taste unripe.

  • 2 cups Shredded Chicken (We like to use rotisserie)
  • 3 Avocados
  • 1/2 Red Onion, finely chopped
  • Lime Juice from 2 limes (fresh squeezed is best)
  • 2 TBS Cilantro, chopped
  • 1 1/2 tsp Cumin
  • 2 Cloves Minced Garlic
  • 1 Jalapeño (2 if you prefer spicy!)
  • Sea Salt to taste

How to make our Guacamole Chicken Salad:

Cook some chicken breast if you haven’t already. A great time-saver is using a rotisserie chicken from the store. You will need approximately 2 cups of shredded/diced chicken. Set aside.

Dice avocados and mash in the bottom of a mixing bowl.

Chop the red onion, jalapeño, garlic, and cilantro and add to the avocado bowl. Add salt and pepper.

Stir all ingredients until JUST combined.

Add chicken and fully mix.

Serve on our favorite pita bread, a croissant, sliced bread or even with tortilla chips! Enjoy!

We love being able to throw a little curve ball on more traditional recipes. This one is perfect and really amps up the healthiness factor. Not to mention that it’s just darn delicious! The slight hint of cumin also makes this a little more hispanic in flavors… and who doesn’t like that? Want more Mexican flavoring? Leave out the cumin and add 2 teaspoons of our Taco Seasoning! Enjoyed by all ages, our Guacamole Chicken Salad is a great healthy option when you are on the go! Just ditch the drive-thru tonight and throw this puppy together!

Ingredients

  • 2 cups Shredded Chicken (We like to use rotisserie)
  • 3 Avocados
  • 1/2 Red Onion, finely chopped

Instructions

  1. Shred chicken from rotisserie, set aside.
  2. In a large bowl, add avocado and mash.
  3. Add Onion, Garlic, Cilantro, Cumin and Jalapeño, mix well.
  4. Combine chicken into guacamole mixture.
  5. Salt to taste.
  6. Serve immediately! Store leftover chicken salad in refrigerator for about 1 day.
