Like most of us, mornings can get quite hectic around our house. Unfortunately, some mornings breakfast isn’t in the cards for ol’ mom! Between packing lunches, signing planners, last minute homework corrections, planning for the day and getting morning chores taken care of, finding time to eat something that resembles breakfast is a miracle! That is why we created these make ahead freezer burritos. You can take one of these out of the freezer and pop it in the microwave for a quick, easy and delicious meal! The kids and husband love them too!
How long will the breakfast burritos last in the freezer?
If the burritos are wrapped and in a freezer bag, they should keep fresh in the freezer for up to 3 months.
What sauce should I dip my burrito in?
Although these burritos are so packed with flavor they don’t really *need* a sauce, we personally like to eat salsa with ours! Hot sauce also adds a nice kick. Another alternatives could be buffalo sauce or ketchup. Anything that sounds good to you would work!

Ingredients for Freezer Breakfast Burritos
- Tortillas
- Frozen Potatoes O’Brien
- Sausage Crumbles (we love these)
- Eggs
- Shredded Sharp Cheddar Cheese
How to make Freezer Breakfast Burritos
In a pan, place 2.5 cups of frozen potatoes over medium heat for 7 minutes, stirring occasionally.

Once potatoes have started cooking, add 1 cup of cooked sausage crumbles into pan and continue cooking for an additional 5 minutes over medium heat.

In a separate bowl, crack 6 eggs and mix well. Pour mixture into pan on stove with potatoes and sausage.

Continue cooking until eggs are fully cooked.

Remove eggs from heat and on a plate, place a tortilla to start preparing your burrito.

Scoop about 3/4 cup of egg filling and place in center of tortilla. Be careful not to overfill because it will make wrapping the burrito more difficult!

Sprinkle shredded cheddar cheese over mixture. We use about 1/4 cup per burrito.

Place burrito on a strip of plastic wrap and fold both sides inward using both hands.

Take another side that has not be folded and begin to roll the tortilla until the seam is facing down.

Once burrito is rolled, fold one side of plastic wrap over top of the prepared burrito.

Fold top and bottom sides over burrito. Roll the burrito to wrap the remaining plastic around and create an airtight wrapper.

Repeat with remaining tortillas, eggs and cheese. Once you have made each burrito individually, place them in a gallon sized freezer safe bag and store in freezer for up to 3 months.

When you are ready to serve, simply pop in the microwave with the wrapper still on for 2 minutes and 30 seconds. You may turn halfway through to allow the microwave to heat more consistently. Remove from microwave, unroll or cut plastic wrap away from burrito and enjoy!
