Frozen waffles were becoming a little too popular in our household! I started trying to come up with an alternative that were healthier than what the kids had grown accustomed to, but still enjoyed any day of the week. These delicious pancakes not only fit the bill, but also started a fun weekend routine that we lovingly call “Pancake-palooza”. My husband and kids triple this recipe and whip up enough pancakes to last the whole school week, and some for after school snacks as well!
Are pancakes good for you?
I don’t think I would put regular pancakes in the “good for you” category. They are typically high in carbs, and low in nutrients. However, these pancakes are just the opposite! The almond flour and almond butter add healthy proteins without loading up on the carbs. The eggs also add protein and the banana helps with potassium and gives them a great flavor! These are pancakes you can feel happy about eating!
What can I put on my pancakes besides maple syrup?
Maple syrup and pancakes go hand in hand. Sometimes it is good to try something different that may not include quite as much sugar! We love to slice fresh berries on top. We also love a thin layer or almond butter with a drizzle of agave or honey. This agave is a great option that is only 5 calories per serving!

Ingredients for our Banana Blender Pancakes
- Banana
- Eggs
- Almond Flour
- Almond Butter
- Vanilla Extract
- Ground Cinnamon
- Baking Soda
- Baking Powder
How to make Banana Blender Pancakes
Place all ingredients in a blender.

Blend until smooth, about 30-45 seconds.

On a greased preheated pan or griddle, pour a large tablespoon of batter for each pancake.

Cook for about 2-3 minutes on each side.

Remove from heat and top with fruit or your favorite pancake toppings!

- 1 TBS almond butter
- 1 tsp vanilla
- 1/2 ground cinnamon
- 1/8 tsp baking soda
