Trader Joe’s Cookie Butter Cookies

These Trader Joe’s Cookie Butter Cookies are a quick and easy treat that are loaded with crunchy corn flakes and creamy cookie butter. These delectable treats are made in less than 10 minutes and with only 3 ingredients!

We can not keep our hands off these delicious little cookie clusters! I originally made a no bake cookie recipe with peanut butter and dark chocolate but wanted something slightly less involved. These babies are loaded with super simple ingredients like corn flakes, Trader Joe’s Cookie Butter, corn syrup… and thats it!

What is cookie butter?

It is pure heaven 🤣 In all actuality, cookie butter is a spread, like peanut butter, that is sold at Trader Joe’s. It is made with oil, flour, sugar, and crushed Biscoff cookies. Cookie Butter is called a ‘speculoos’ cookie in Dutch, and you will see that word on the exterior of the container. It is delicious on crackers, toast, fruit, in scones…. pretty much anything! We love it in this no-bake cookie recipe!

Is there a substitute for corn syrup?

There are several alternatives you can use in place of corn syrup. Some of the options aren’t quite as thick, so it will change the overall consistency of the recipe. Some use a cane syrup, agave nectar, honey, or a brown rice syrup. Just be aware that some flavors, like honey, are fairly strong and can change the taste of a recipe as well.

How to make our Trader Joe’s Cookie Butter Cookies:

First, place a large skillet on a burner over medium heat. Completely mix and heat 1 cup of corn syrup and 3/4 cups of white sugar. Bring to a slight boil. I will take about 3-4 minutes for it to boil.

Once boiling, turn off burner and remove from heat. Mix in 1 cup of cookie butter. Mix until completely combined with the corn syrup and sugar.

Next, add all 5 cups of corn flakes to the mixture and completely stir. The mixture is pretty thick so take your time to make sure all the corn flakes are evenly coated with the yummy mixture.

Last, with a spoon, drop about 1 1/2 tablespoons worth of cookie mixture onto wax paper and form into any shape you want…. I usually try for a round-look! You can use your fingers or the back of a greased spoon. The batter is pretty sticky!

Allow cookies to cool for at least 15 minutes and then enjoy! You can store these on counter or in the refrigerator as long as they are sealed in an air-tight container. They remain fresh for up to 5 days!

I just love a no-bake cookie. I feel like it makes baking so much less stressful. And to top it off, Trader Joe’s Cookie Butter is just about my favorite thing EVER.   • 1 Cup Corn Syrup

  • 5 Cups Corn Flakes
