Eat it while coffee is brewing or on the drive to school drop off!
There is nothing I hate more than getting my tiny humans up, dressed, and fed on school mornings and then turning around and trying to figure out what I can eat. I’d like to say that I’m super efficient with time and a great pre-planner but then I would be fibbing. This easy Oatmeal on the go has been my saving grace since I’ve been trying to get back into healthy eating habits and trying not to skip that all important breakfast just because I hit snooze an extra time… or four!
Can you make overnight oats for the week?
Just like you pack salads for the week, you can save time every night by prepping five days of overnight oats. All you need are mason jars, some basic ingredients, and an under-300-calorie super filling breakfast will be waiting for you every morning.
Ingredients:
- 1 Cup Rolled Oats
- 1 Cup Milk
- 1TBS Honey
- 2 tsp vanilla extract
- 1/4 Cup Blueberries
- 1 tsp Cinnamon Powder
How to make Simply Healthy Overnight Oats:
Measure out 1 Cup of oats and with a funnel or pouring delicately, add them to the bottom of a clean mason jar.
Add 1 cup of milk. (We use whole milk.) Pour in 1 TBS of vanilla extract, 1tsp of cinnamon powder, and 2 tsp of honey.
Screw the top on your jar and give it a really good shake for 10-15 seconds.
Place them in the refrigerator. You want them to set at least 6 hours so we fund these are mostly useful when made the night before. They are good about 3-5 days… Timing will really come down to how long you had on your milk before it expired.
Bottom line, sometimes it’s tough to make breakfast a priority and a healthy one at that. I know about anyone else but this girl loves her some sleep. The later I can push it, the later I will. The mason jar fits right in my cup holder and is super easy to eat while quizzing my kids on their spelling words as we head to school. Its also incredibly filling and holds me over great until lunch! Grab and go’s are just the best, aren’t they?
Simple Healthy Overnight Oats
Ingredients
- 1 Cup Rolled Oats
- 1 Cup Milk
- 2 tsp Vanilla Extract
- 1TBS Honey
- 1 tsp Cinnamon
- 1/4 Cup Fresh Blueberries
Instructions
- Pour all ingredients in a mason jar and shake vigorously for approximately 25 seconds.
- Place in refrigerator for 12 hours.
- Eat cold or warm in the microwave.
- Enjoy!
