Quick Shrimp Chowder

Looking for something quick and easy to warm you up after a long night of sitting at the ball fields? This Quick Shrimp Chowder is where it’s at! With only a few ingredients and minimal prep and cook time, you can have a bowl of this hot soup on the table before you know it!

My girlfriend Julie gave me this recipe what seems like a hundred years ago. She would always call me up when the guys were in the field training and invite the kids and I over for dinner to enjoy this tasty chowder. I have to admit, I was skeptical at first, but after one bite, I was sold! The added bonus is how much the littles love it too!

What is Chowder?

Chowder is a creamy thick soup that usually contains seafood, potatoes and onions. It is the ultimate comfort food on a cold winters night!

What should I serve with Shrimp Chowder?

We eat a lot of soup around our house and usually try to pair this delicious recipe with a nice green salad, cornbread, or even garlic bread.

Ingredients for Quick Shrimp Chowder

Ingredients for Quick Shrimp Chowder

  • 2 TBS Butter
  • 1 medium onion, chopped (about 1 cup)
  • 2 cans cream of potato soup
  • 3 1/2c milk
  • 1/2 tsp crushed red pepper
  • 1 1/2 lbs raw peeled shrimp (fresh or frozen)
  • 1 c shredded pepper jack cheese
  • 1 can sweet corn

How to make our Quick Shrimp Chowder

First, dice the onion and shred your cheese. We recently discovered this and were so excited about the time we will save no longer needing to shred pepper jack!

In a large soup pot, melt your butter and add onions over medium heat. Cook until the onions become translucent.

Next, stir in the potato soup, milk and crushed red pepper. Bring to boil, stirring constantly.

Place shrimp in pot and reduce heat. Stir often until shrimp are pink. Once shrimp are cooked, reduce to low heat.

Finally, add the remaining ingredients, cheese and corn. Continue to stir until cheese is fully melted. Don’t forget to constantly stir the milk likes to burn on the bottom!

Serve and enjoy immediately! You can also refrigerate and reheat on the stove over low heat when you are ready to eat!
