Keep the New Years resolutions strong with our delicious Instant Pot Salmon and Vegetables. With fresh bell peppers, carrots, and zucchini, this one pot dish is wonderfully flavored with herbs, butter, and a fantastic salmon seasoning. Healthy never tasted so good 🙂
Salmon is my favorite fish to eat. There are so many health benefits and truly do like the taste. I don’t make it as much as I should because I usually don’t have the time to give it what it needs. I realized I needed to find a way to fit salmon in my busy day without sacrificing taste. Thats how we came up with this recipe. It’s flakey, flavorful, healthy and so simple to make!
Is Salmon healthy for you?
Oh yes! There is a lot of research that suggest the combination of omega-3’s, selenium, and vitamins A and D are key for improving immunity, both in the short and long term. Salmon is packed with it! Eating at least two servings a week can reduce your risk of chronic illnesses like heart disease, diabetes, and cognitive decline.
Which kind of salmon is the healthiest?
Per Livestrong.com, wild Alaskan salmon is the healthiest salmon available. The regulated safe fishing practices used to capture the salmon and the wild, natural diet they consume render it healthy for the palate and the environment. The calorie and fat content in wild salmon is lower compared with farmed salmon.
Ingredients for our Instant Pot Salmon and Vegetables:
- ¾ cup water
- 2 TBS Salmon Seasoning (THIS one is our favorite!)
- A few leaves of basil
- 1 pound salmon, skin on if you can but not mandatory
- 3 tsp of butter
- 1 carrot
- 2 lemons (1 thinly sliced and 1 for garnish)
- 1 zucchini
- 1 red bell pepper
How to make our Instant Pot Salmon and Vegetables:
First step is to put water and herbs in the Instant Pot and then put in the steamer rack, making sure the handles are extended up.
Next, place salmon, skin down on rack. If you do not have salmon with skin, wrap your Instant Pot grate with foil. This keeps the salmon from falling apart when cooking and doesn’t change the outcome of the fish.
Drizzle salmon with melted butter and season with the salmon seasoning. If you don’t have salmon seasoning, you can substitute salt and pepper, lemon pepper or Italian herbs. Next, top with the lemon slices.
Close the Instant Pot and make sure the venting lever on top is turned to “Sealing”. Press “Steam” and press the + or – buttons to set it to 3 minutes. It will then begin to come to pressure, which takes about 8-10 minutes. While salmon cooks, slice your veggies. We choose to julienne them because it makes the dish look pretty but you can choose whichever style you prefer.
When the Instant Pot beeps that it’s done, quick release the pressure, being careful to stay out of the way of the steam that will shoot up. We choose to release the pressure by using a long utensil to push the lever to keep our body as far from the steam as possible.
Remove lid, and using hand protectors carefully remove rack with salmon and set on a plate. (The handles of the steam rack will be hot!)
Remove basil leaves with a spoon and throw away. Last, press “saute” on the Instant Pot. It will become hot really quickly. Add veggies and cook for just about 2 minutes. Stir occasionally.
Remove vegetables and serve with salmon. At the point, add remaining teaspoon of butter to the pot and pour a little of the sauce over the entree if desired. You can also squeeze some lemon over the salmon for extra flavoring.

Instant Pot Salmon and Vegetables
Ingredients
- ¾ cup water
- 2 TBS Salmon Seasoning (THIS one is our favorite!)
- A few leaves of basil
- 1 pound salmon, skin on if you can but not mandatory
- 3 tsp of butter
- 1 carrot
- 2 lemons (1 thinly sliced and 1 for garnish)
- 1 zucchini
- 1 red bell pepper
Instructions
- Place water and basil in the Instant Pot. Add Steam rack with salmon evenly distributed on top.
- Pour butter (minus 1 TBS) evenly over salmon. Then sprinkle with salmon seasoning and place sliced lemon on top.
- Close lid and set Instant Pot to "steam" for 3 minutes.
- While salmon is cooking, cut up (julienne) carrot, zucchini, and red bell pepper. Set aside.
- When timer goes off, manually release remaining pressure immediately. (Carefully too!)
- Remove salmon from Instant Pot. Also remove basil leaves and throw away.
- Press "saute" and allow Instant Pot to heat for 2 minutes. Place vegetable and cook for 2-3 minutes, stirring frequently.
- After 2-3 minutes, remove from Instant Pot and serve with Salmon.
- Enjoy!
