Simple to make and ingredients that don’t skimp on flavor, our Herbed Garlic Chicken is a great weeknight option for the family. Make this to meal prep for the week ahead or for the hungry kids you know that will be begging for food in about an hour. With minimal prep, you can get this delicious, healthy meal on the table in no time with ease.

When sports get into full swing, I find that sometimes my ability to get vegetables into my kids mouths decline. I’m always looking for ideas with fresh ingredients, bold flavors, and that are simply to throw together. This recipe answers all that! I also make some brown rice on occasion and turn this into an Herbed Garlic Chicken Bowl if we need variety. My kids love sweet potatoes and I love them eating it 🙂
What herbs go best with chicken?
Just about everything! You can’t go wrong with pretty much any herb as long as you are complimentary to whats going with it. Making Chicken Piccata? Use Italian herbs, lemon pepper, or just basil or thyme. Making a hispanic chicken dish? Use coriander, cumin, cilantro, or a fajita seasoning. Pretty much anything works with chicken, which is why its so easy to cook with!
How long does it take to bake chicken at 400 F?
Basing the fact that your chicken, is not frozen and close to room temperature at time of baking, it should only take 22-26 minutes to reach an internal temperature of 165 F. Specifically with this recipe, it takes a little bit longer because it is covered part of the time and also sharing some of it’s heat with two other vegetables. The key is that the inside reaches a minimum of 165 F.

Ingredients for our Herbed Garlic Chicken:
- 1/3 cup chicken broth
- 1/4 cup butter, melted
- 1 TBS minced garlic
- 2 tsp fresh parsley
- 1 tsp thyme
- 1 tsp rosemary
- 1.5 pounds of skinless chicken breasts
- 1 pound of diced sweet potato
- 1 pound green beans
How to make our Herbed Garlic Chicken:
The first step in to preheat oven to 400°F. Next, you need to lightly grease a baking sheet with cooking spray. Set aside.
Meanwhile, peel the skin off the potato and cut it into bite sized pieces and snip the ends of the green beans. Melt the butter and combine it with the broth, garlic, parsley, thyme and rosemary together in a bowl. Be sure to mix it together thoroughly.

Next, place the chicken breasts on the baking sheet and surround them with the potatoes on one side and green beans on the other. Drizzle 3/4th of the butter mixture over top of the chicken, green beans and potatoes, and season well with salt and pepper. Next, lightly mix the potatoes and green beans to coat with the butter mixture while on the sheet pan.

Bake in the oven for 25 minutes, covered with foil. After 25 minutes, place it under the broiler for 3-5 minutes to brown up the potatoes. Most importantly, keep a close on it at this point so your meal doesn’t burn!
After that 3-5 minutes is up, remove the baking tray from the oven. Be sure to allow the chicken about 5 minutes to rest before you cut it up.

Pour the remaining herb butter sauce over the vegetables and toss them lightly.
Lastly, sprinkle with fresh parsley – if you have it -, and serve immediately with pan juices.

All to often, chicken can become boring or something you loathe to cook. We are always trying to reinvent a new way to improve on our poultry recipes. In short, this one has the ease factor as well as the flavor component. On top of that, it’s healthy and a great meal to make during your mid-week craziness! Herbed Garlic Chicken
Ingredients
- 1/3 cup chicken broth
- 1/4 cup butter, melted
- 1 TBS minced garlic
- 2 tsp parsley
- 1 tsp thyme
- 1 tsp rosemary

- Combine together the butter, broth, garlic, parsley, thyme and rosemary together in a bowl.
- Place chicken on the baking sheet and arrange the potatoes all around the chicken. Toss 1/2 cup of sauce through the chicken and potatoes, and season well with salt and pepper.
- Bake in the oven for 25 minutes, covered with foil. After 25 minutes, place it under the broiler for 3-5 minutes to brown up the potatoes.
- Pour the remaining garlic herb butter sauce over the beans and potatoes and give a good stir. Let sit for 5 minutes.
- Sprinkle with fresh chopped herbs (optional), and serve with the pan juices.
