Dairy and Gluten-Free Banana Bread

What can I substitute for butter in banana bread?

Ashley has a severe dairy-allergy that developed later in life and she had to completely revamp her way of cooking. Butter was a staple that she could no longer use. One butter substitute is ghee. You can also use 3/4 cups of vegetable oil for every 1 cup of butter a recipe calls for. We prefer to use Earth Balance Vegan Buttery Spread. It looks like butter and provides almost the exact same consistency. We also like it because it is vegan and has 0% trans fat!

 

Tips for making delicious banana bread

  • The first and most important step of making banana bread happens when mixing the first three ingredients. Always add the Vegan spread/ghee (at room temperature) with the sugar and vanilla. Turn on your mixer and combine for at least 2 minutes! The consistency will almost look whipped before you want to add anything else.
  • I like to use bananas that I’ve thrown in the freezer before they become too ripe. Try to have them at room temperature before making your bread…trying to throw a frozen banana in your batter will not go so well! You can always put them in the microwave and defrost them slowly. Check every 30-45 seconds to make sure they aren’t liquifying.
  • The recipe baking time calls for 1 hour. Start checking at around 45 minutes for completion. You will notice the edges pulling away from the dish and they will start turning a darker brown than the rest of the loaf.

  • 1.5 Cups Almond Flour
  • 1 Stick of Vegan Spread
  • 1 Cup Sugar
  • 2 TBS Cinnamon
  • 1 TBS Vanilla
  • 2 tsp Baking Soda
  • 2 Eggs
  • 2 Ripe Bananas

How to make dairy and gluten-free banana bread

 Preheat the oven to 350 F. 

 Add room temperature vegan spread and eggs with the sugar and vanilla. Cream until whipped: about 2-3 minutes.

 While the mixer is going, slowly add the flour, cinnamon and baking soda together.

 Add two bananas and mix until just combined.

 Once all ingredients are fully combined, grease loaf pan and pour mixture into dish.

 Bake for 45-60 minutes. Start checking for completion at 45 minutes.
