If you’re looking for an easy to bake casserole dish that will have your kids coming back for seconds, you need to look no further.

It’s such an easy ‘dump-and-bake’ recipe that my 8-year-old can literally prep 90% of the ingredients as she helps me out throwing together this family favorite. It doubles as a simple-to-bake dish and also provides a great comfort food for those welcomed friend/family gatherings. Give this a go and you’re bound to hear some raving critiques—I promise! I mean c’mon…Bacon, cheese and Ritz Crackers – if that doesn’t have your mouth watering, then we need to have a talk about your life choices! (Just kidding… kinda).

Can I substitute out the greek yogurt?

Absolutely! A great substitute for greek yogurt in pretty much all of my recipes is sour cream. They have very similar consistencies, and because they are just an additive, their flavor isn’t really showcased. I choose to use greek yogurt because it is healthier, has a good amount of protein, and good probiotics! Sour cream is nice and thick as well, but doesn’t offer the same health benefits.

Can I sub out the chicken for leftover turkey??

Yes!! This is a great dish to throw together after the holidays when you have no idea how to use up all the leftover turkey. I would do all the same steps and ingredients, but substitute in turkey and you now you have a great dish that your family won’t be tired of and you won’t be wasting any of that holiday food! It’s a win/win for everyone.

  • Chicken
  • Ranch Seasoning
  • Greek Yogurt
  • Cream of Chicken Soup
  • Bacon
  • Shredded Cheese

Topping:

  • Ritz Crackers
  • Butter

How to make our Creamy Chicken Bacon Casserole:

Preheat oven to 350 F. Lightly spray a 9×9 baking dish with cooking spray.

In a large mixing bowl, combine the 4oz ranch seasoning with 3 cups of cooked shredded chicken, 1 can of cream of chicken soup, 2 cups of shredded cheese, 1 1/2 cups of greek yogurt and 1 cup of cooked bacon, diced.

In a small bowl, mix one sleeve of crushed ritz crackers with 4 tablespoons of melted butter. Stir until the butter is evenly distributed.

Evenly sprinkle the cracker mixture over the casserole dish. Bake uncovered 30-40 minutes.

Fresh out of the oven, it easily provides 8-10 servings finished with melted cheese throughout, flavorful ranch seasoning and a crumbled Ritz Cracker topping – I’m not joking, it’s seriously a touchdown of a meal. Need another reason to love this casserole? It also works great to prep early (up to 48hrs ahead of time) and then refrigerate until you’re ready to bake. Creamy Chicken Bacon Casserole

Ingredients

  • 3 cups cooked chicken, shredded
  • 1 (1oz) packet of ranch dressing seasoning
  • 2 cups cheddar cheese
  • 1 cup bacon, cooked and diced
  • 1.5 cup greek yogurt
  • 1 (10.74oz) cream of chicken soup
  • 1 sleeve of ritz crackers, crushed (About 1 cup)
  • 1/4 cup butter, melted

Instructions

    1. Preheat oven to 350 F.
    2. Lightly spray a 9x13 baking dish with cooking spray or butter.
    3. Combine all the ingredients, except butter and crackers, in a large bowl.
    4. Spread mixture into greased baking dish
    5. Combine crushed crackers and butter and sprinkle over mixture.
    6. Bake uncovered for 35 minutes.
