BBQ Sweet Potato Slices

Our BBQ Sweet Potato Slices have only three ingredients, are so easy to make, and are simply delicious! These little slices of perfection aren’t time consuming and add a little gourmet flair to a weeknight dinner. You can even prepare these as a snack when 4:00 rolls around and you are craving something sweet and savory!

My kids don’t typically enjoy a baked sweet potato and I don’t like having to beg them to eat them. My husband and I enjoy sweet potatoes any way we can get them so I had to get a little more creative. This recipe is fantastic for so many reasons. The prep time is almost nonexistent! You can cook on a grill or a stovetop. They cook up great and are ready to serve in 8-10 minutes. My kids love them and so do we. You can also personalize the toppings with whatever you would normally eat. They also are a great compliment to meals like our 3 Ingredient Baked Pork Chops, Apple Butter Chicken, or our BBQ Pulled Pork Tacos.

Are sweet potatoes healthier than regular potatoes?

Honestly, it depends on what health benefits you are looking for. Both potatoes are a healthy carbohydrate source. They both contain about the same amount of carbohydrates: 1/2 cup = 15 grams of carbs. Sweet potatoes, however, have more fiber and are slightly lower on the glycemic index than white potatoes. Most nutritionist would recommend eating a sweet potato over a white one!

Can you eat sweet potatoes on a keto diet?

Sadly, no you can not. Although they are an overall healthier option that white, starchy potatoes, sweet potatoes are pretty high in carbs, no matter how you cook it. Since a ketogenic diet relies on next to no carbs, you’ll have to say goodbye to this delicious vegetable!

Ingredients for our BBQ Sweet Potato Slices:

  • 1 lb sweet potato (2-3 small ones)
  • 1TBS BBQ seasoning
  • 1/4 C crumbled feta cheese
  • Fresh Chopped Parsley to garnish

How to make our BBQ Sweet Potato Slices:

First, dice sweet potato into 1/4 inch rounds. Place EVOO and BBQ seasoning in a bowl. Mix. Toss sweet potato rounds in mixture. Heat a skillet up to medium heat.

Heat a grated skillet over medium heat. Add one layer of the potatoes to the skillet and grill for 2-3 minutes per side.

As the slices cook, you will be able to smell the flavors! At about 3 minutes, I usually check the underside of one to gauge how much longer until I need to flip them. The second side always cooks faster than the first. I love the darker grill marks so I cook mine a little longer than my husband. It really comes down to you and your preference.

Once the slices are cooked, typically 3-4 minutes per side, you can garnish right there on the skillet or remove and garnish on a plate. If you leave them on the skillet, they will continue to cook. Add as much or as little feta as you like and serve!

The best part about these sweet potatoes is how simple yet tasty they are. You aren’t sacrificing taste because you only have 15 minutes, and you aren’t slaving for an hour to get something healthy and delicious. These are a family-pleasing option for any night of the week and work great for an appetizer or side dish. The BBQ seasoning is smoky and not too salty which makes it perfect for our taste!

BBQ Sweet Potato Slices

Ingredients

  • 1 LB of sweet potato, cut in slices
  • 2 TBS Barbecue Seasoning
  • 1 TBS olive oil
  • Chopped parsley to garnish

Instructions

    1. Slice sweet potato into 1/4 inch slices.
    2. Place olive oil and BBQ seasoning in a bowl and mix.
    3. Toss sweet potato slices in the mixture and let them sit while skillet heats.
    4. Heat grated skillet over medium heat. Add one layer of the potatoes to the skillet and grill for 3-4 minutes per side.
    5. When cooking has completed, place on a plate and garnish with parsley and feta cheese. Enjoy!
