Their perfect crispy tops look like they’re just about to pop off and their fluffy body’s make them tower over anything you’ve previously baked! These are the muffins you will want to wake up to every single morning.

How do I make my muffins fluffy?

Muffins use baking powder, baking soda or both, to create the “rise” that makes them light and fluffy. If you use too little, they won’t rise enough. If you use too much, they will rise quickly and then collapse. The key is finding the right proportion and thats either by following a recipe, or trial and error!

Can you freeze chocolate chip muffins?

Absolutely! We do it all the time. First, you need to cool the muffins completely before wrapping and freezing. To freeze, wrap securely in foil or freezer wrap, or place in freezer bags. Muffins can be stored frozen for up to 3 months. Be sure to seal in an airtight container to keep them as fresh as possible.

Ingredients for our Simple Chocolate Chip Muffins:

  • 1 Cup butter
  • 2 C sugar
  • 4 Eggs
  • 2 tsp. vanilla
  • 4 C flour
  • 1 C Milk
  • 4 tsp. baking soda
  • 1 tsp. salt
  • 4 C Dark Chocolate Chips (The BEST chips if you can find them!)

How to make our muffins:

First, preheat oven to 425 F.

Next, cream butter and sugar in large mixing bowl. We suggest room temperature for all ingredients that would otherwise be refrigerated.

Add eggs, slowly, one at a time. Then, slowly add the vanilla. Blend throughly.

In a separate bowl, combine flour, baking powder and salt.

While alternating, add flour mixture and the milk to the butter and sugar mixture. The batter will be very thick. This is what you want!

Once the ingredients are blended really well, turn of your mixer. Fold in the dark chocolate chips by hand, making sure you don’t over mix.

Once batter is done, grease muffin tins. Even if you are using muffin wrappers, you will want to grease the top of the baking dish because the tops expand on these!

Sprinkle tops generously with sugar (about a tsp each) and bake in a preheated oven at 425 F oven for ONLY 10 minutes.

After 10 minutes of baking, turn oven temperature down to 375 F and bake an additional 15 minutes until muffins are done in center and rich golden brown on top.

  7. Grease muffin tins.
  8. Place batter evenly in muffins cups.
  9. Sprinkle generously with sugar and bake in preheated 425 F oven for ONLY 10 minutes.
  10. After 10 minutes of baking, turn oven temperature down to 375 F and bake an additional 15 minutes until muffins are done in center and rich golden brown on top.
