Quick Broccoli

The exact definition of fast food! Our Quick Broccoli takes just 1 minute in the Instant Pot and it is ready to go. With shredded carrot to give it a little sweetness and chicken broth to enhance the flavors, this side is a great and easy option on a busy week-day night. Fresh and healthy, our broccoli is a great accent to any entree this week.

What can be added to broccoli to make it taste better?

There are several option out there that you can put on your broccoli. We like adding cheese to give it a little something better, and also we steam it with broth instead of water to add to the flavors. You can also top it with onions, garlic, butter, melted cheese, or bacon bits.

Is broccoli good for you?

Broccoli is high in many nutrients, including fiber, vitamin C, vitamin K, iron, and potassium. It also contains more protein than most other vegetables. This green machine can be enjoyed both raw and cooked, but recent research shows that gentle steaming provides the most health benefits.

Ingredients for Quick Broccoli

Ingredients for our Quick Broccoli:

  • 1 pound of broccoli
  • 1/2 cup water
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt

How to make our Quick Broccoli:

The first step is to chop the broccoli into florets. Next, add all the chicken broth to the Instant Pot. Follow with the broccoli. Shred the carrot on top of the broccoli. Put the lid on and place the pressure seal lever to “seal”.

Next, you will need to press “Manual” and make sure it’s on “High.” Set the time to just 1 minute. (For crunchier broccoli, set the time to 0 minutes.) It will take approximately 5-8 minutes for the Instant Pot to come to pressure. Once it has, the time will start to count down.

Once the timer beeps, vent the remaining steam from the Instant Pot right away by moving the pressure release lever to “Venting”. You will need to be really careful on this step so you don’t burn your hand or face. We typically use a long spoon to vent while being sure to lean away from the steam.

Once all the steam is released, open the pressure cooker lid slowly. Carefully remove the broccoli to a bowl using a large spoon. Drizzle the broccoli with olive oil, kosher salt, and cheese.

Serve and enjoy!

I have found, with my kids especially, there is really no way to make my family beg for broccoli. Never the less, it’s something I try to put on their plates at least once a week. This recipe simplifies how i’m going to get it on their plates with the limited time I typically have. Minimal ingredients + minimal cook time = maximum taste and ease! That combo is a win for mom every time.

Ingredients

  • 1 pound broccoli florets
  • 1/2 Cup chicken broth
  • 1 carrots, shredded
  • Paresan cheese for garnish

Instructions

  1. Chop broccoli into florets.
  2. Place broccoli, chicken broth and shredded carrots in the Instant Pot.
  3. Place lid on and lock in place. Press "manual" and set for 1 minute.
  4. Once timer beeps, release pressure immediately. Be very careful so you don't get hurt from the steam.
  5. Place in a bowl and top with shredded cheese.
  6. Enjoy!
