Mexican Tortilla Lasagna

Happy Cinco De Mayo! This Mexican Tortilla Lasagna is the perfect dinner to help celebrate the day! With delicious layers of ground beef, corn and black beans, this lasagna can satisfy even the biggest appetite! Now- go make yourself a margarita while this tasty dinner is in the oven!

Mexican food is my ALL TIME favorite. Amanda actually teases me about how often I frequent our local restaurant! The chips, queso, guac, salsa, tacos, rice and beans…I just love it all! I started to make this recipe in order to sneak in an extra night of mexican dishes around my house! It could disguised it as lasagna, right?!😂 Maybe they won’t know it isn’t Italian? Ha!

What is Mexican Lasagna?

Mexican Lasagna is layers of ingredients that you would normally find in mexican food. You use flour tortillas instead of pasta, and instead of spaghetti sauce, you use enchilada sauce or salsa. There are many different variations to Mexican Lasagna, but our recipe is kid tested and father approved! 😉

What to serve with Mexican Lasagna:

This dinner is definitely a meal all by itself, but if you would like to serve a side with it, here are a few ideas.

  • Yellow rice
  • Refried beans
  • Salad
  • Fruit (oranges, strawberries, mango)

  • Tortillas
  • Ground Beef
  • Taco Seasoning
  • Black Beans
  • Fire Roasted Corn
  • Enchilada Sauce
  • Cheddar Cheese

How to make our Mexican Tortilla Lasagna

Preheat oven to 350. Brown ground beef, rinse and drain. Season with taco seasoning. Set aside.

Slice 9 of your 12 tortillas in half. Leave the remaining 3 whole. Rinse and drain black beans and drain corn. In a 9×13 dish, Place 6 tortilla halves (3 whole tortillas) around the bottom of the dish with the cut (flat) side facing out.

Place one whole tortilla in the center to form a layer of tortilla. It is okay if there are small holes, it doesn’t have to be perfect!

Spread about 1/3 of your ground beef on top of the tortillas. Repeat using 1/3 of the beans and 1/3 of the corn. Pour about 1/4 of the enchilada sauce (about 7oz) over this layer. Sprinkle 1/2 cup of cheese on top.

Repeat this 2 more times with the final layer using the remaining 1/2 of the enchilada sauce and 1 cup of cheese.

Place in the oven and bake for about 30 minutes until it starts to bubble. Allow lasagna to sit for about 15 minutes before serving- this will help it hold its layers together when serving!

  • 12 Flour Tortillas
  • 1lb. Ground Beef
  • 1 oz. Taco Seasoning
  • 1 15oz can Black Beans
  • 1 14.75oz can Fire Roasted Corn
  • 1 28oz can Enchilada Sauce
  • 2 cups Cheddar Cheese

Instructions

    1. Preheat oven to 350.
