I grew up eating kielbasa and macaroni and cheese. They always came together. Naturally, I made the same dish for my kiddos. I wanted to reinvent a way to incorporate kielbasa into a more adult-like meal. This recipe answered it all! The bite-size pieces of pepper with potato and kielbasa are so good together. The dried ranch seasoning just makes everything taste so rich and flavorful. It’s quick to throw together but does not lack on taste!

What is kielbasa?

Kielbasa is a broad term that is generally used for a group of Polish sausage. The word is actually translated to mean “sausage”. They are typically made with pork meat, salt, and various spices and herbs such as pepper, garlic, and marjoram. We specifically choose beef because we like the flavor and prefer beef to pork for this recipe.

What’s the healthiest potato?

We read a study that compared four of the most popular potatoes and which was the most nutrient-dense with vitamin and minerals. They came up with this figure based on how many of these nutrients were in each calorie.

Here is the ranking, in order:

  1. Red Potato
  2. White Potato
  3. Russet Potato
  4. Sweet Potato

So for this specific recipe, we used the red potato! It offered the most nutritional value and also has great flavor. It cooks great on the stove top and our family eats it up.

This is a great meal to feed the family that offers starch, protein, and veggies all in one dish. It is also great as leftovers and heats nicely in the microwave. Use a non-stick skillet if you have it. If not, we recommend using a little bit of olive oil to coat the pan before adding the potato. Enjoy having a deliciously, easy dinner for tonight!
