Corn Feta and Black Bean Dip

Deciding what dish to bring to a party can be stressful! This Corn Feta and Black Bean Dip is so simple and easy to throw together, and you can keep the ingredients on hand for any last minute parties or gatherings!

A few years ago, I was part of a Bunco group and one of the ladies brought the most delicious, unique dip I had ever seen! The ingredients didn’t immediately make sense to me, but I didn’t care because it tasted so darn good! When I got home I knew I needed to recreate this amazing dip for my husband. After a few tries I think I finally nailed it!

What is Shoepeg Corn?

According to TasteofHome.com, “The corn was named for its peg-like shape. Shoepeg has smaller kernels and is sweeter than yellow corn. If you cannot find it at your grocery store, substitute either white or yellow corn in your recipes.”

Can I use frozen corn?

You can use frozen corn if you wish, just be sure to allow it to fully thaw! We prefer using canned for this recipe because we love the flavor it adds and it makes this dip so easy to throw together with no prep work!

Ingredients for our Corn Feta and Black Bean Dip

  • White Shoepeg Corn
  • Crumbled Feta
  • Black Beans
  • Sugar
  • Apple Cider Vinegar
  • Cooking oil

How to make our Corn Feta and Black Bean Dip:

In a medium bowl, add rinsed and drained black beans, drained corn and feta.

Add 3 tablespoons of each oil, sugar and vinegar.

Carefully mix all ingredients together and refrigerate for at least 30 minutes before serving.

Ingredients

  • 11oz White Shoepeg Corn
  • 6oz Crumbled Feta
  • 15oz Black Beans
  • 3 TBS Sugar
  • 3 TBS Apple Cider Vinegar
  • 3 TBS Cooking oil of your choice (vegetable or canola recommended)

Instructions

    1. In a medium bowl, add rinsed and drained black beans, drained corn and feta.
    2. Add 3 tablespoons of each oil, sugar and vinegar.
    3. Carefully mix all ingredients together and refrigerate for at least 30 minutes before serving.
    4. Serve with tortilla chips and enjoy!
