What are chia seeds?
Chia seeds come from the desert plant named salvia hispanica. The chia seed is believed to have come from Central America where the seed was a staple in the ancient Aztec diet. Chia seeds have become popular because they have been found to be an excellent source of omega-3 fatty acid. Chia also contains protein and minerals including iron, calcium, magnesium and zinc. They are also an excellent source of fiber at 5 grams per tablespoon!
How do you eat chia seeds?
There are several ways we utilize chia seeds in our diets. Dry chia seeds can be added whole or ground to smoothies and juices, sprinkled on top of a salad or mixed into yogurt or oatmeal. When you add chia to anything wet, like smoothies and yogurts, they will swell a bit as they absorb the moisture. However, they will still have a slight crunch!
Ingredients for a Chia Breakfast Parfait
- Coconut Milk (or any milk)
- Chia Seeds
- Vanilla Extract
- Fruit/Jam topping of your choice
How to make a Chia Breakfast Parfait
Pour 1 Cup of coconut milk (or any milk) in a mason jar.
Add 1/2 cup chia seeds to the jar. Add vanilla extract to the other two ingredients.
Put lid back on the jar and shake vigorously for 30 seconds.
Place in refrigerator for at least 30 minutes to set.
Enjoy alone or with your favorite fruit topping.
When I first gave this to my kids, I kinda held my breath and sat without blinking to see if they would go for it. Low and behold, they loved it! My son preferred the chia parfait topped with our raspberry fruit spread and my daughter went nuts for it when I spooned a dollop of Nutella on top. It was nice to add something nutritious to our list of breakfast ideas, right next to the pop-tarts and Eggo waffles- ha!
