Broccoli and Beef Italian Bowl

Simplify your dinner prep tonight with this delicious and easy Broccoli and Beef Italian Bowl. It really cannot get much simpler than this… steam some broccoli; add in seasoned ground beef mixed with Italian stewed tomatoes; top with your favorite shredded cheese. Too good to be true? Not with this one! Store this recipe away when you have a busy night planned ahead – it’s made in less than 15 minutes and you only need 6 ingredients! You can thank me later.

Since life has resumed back to a somewhat ‘normal’ routine in my small town, we are feeling very blessed that kids’ sports are back into full swing. BUT… that also means I am carting both kids to two different locations, three nights a week! If I didn’t spend time to plan ahead for dinner options, Chick-Fil-A nuggets would be the recurring trend. This Beef and Broccoli  bowl is an answer to at least one of those rushed evenings. I whip it up in under 15 min, toss it in a Rubbermaid, and the kiddos eat en route to practice. I love that with this bowl my kids are getting protein and veggies all in the same plate. But better yet, when I get home from the carpool shuffle, I’m only cleaning one skillet!

Is beef good for you?

First off, ground beef is meat from a cow that has been ground or finely chopped. It is one of the most popular types of meat. It’s surprisingly rich in high-quality protein, vitamins, and minerals. All of these factors suggest it may improve muscle growth and maintenance, as well as exercise performance. As a rich source of iron, it may also cut your risk of anemia. A key factor in choosing ground beef is the fat content. Less fat is overall more healthy for your heart.

Can I substitute other meat in for ground beef?

Absolutely! You can! You can use a ground turkey, ground pork, or ground chicken. The meat you choose will have a fairly significant impact on the overall recipe. Beef was selected because I felt it had the best flavor without being inundated with additional spices. This is totally a personal preference so feel free to substitute in your favorite! How to make our Broccoli and Beef Italian Bowl:

First, place raw ground beef in a skillet and cook on medium heat.

While beef is cooking, roughly chop broccoli into florets. Add them to a microwave safe bowl and add chicken broth to the broccoli. Cover container with plastic wrap and microwave on high for 4 minutes.

Once ground beef is completely cooked, remove from heat and drain grease. Open the can of Italian Stewed Tomatoes and and thoroughly drain. Add the tomatoes to the ground beef and mix.

Remove the broccoli from the microwave and add to the ground beef mixture. Stir. Last, add the dried minced garlic and onion salt. Mix until spices are evenly distributed.

Portion the dinner out in a bowl and garnish with shredded cheese or eat as it is! Enjoy!

If you’re anything like me, I’m finding there are definitely evolving stages in in my ‘cooking-life.’ I’ve entered a time where I really enjoy spending time in the kitchen and knocking out a delicious detailed recipe on certain evenings. Then there are also other times where my plan is to get in and out of the kitchen in under 20 minutes, yet still create something that is delicious and nutritious. This recipe is one of my favorites because it combines a small number of ingredients, only requires a minimal amount of cook time and I’m done cleaning up before I get through listening to my favorite song. Seriously… who doesn’t like fresh and simple food that tastes great?

Broccoli and Beef Taco Bowl
Yield: 4 Servings

Broccoli and Beef Taco Bowl

Ingredients

  • 2 Cups broccoli
  • 1 pound of ground beef
  • 1 can Italian Tomatoes, drained
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup chicken broth

Instructions

    1. In a skillet, over medium heat, brown the ground beef.
    2. While ground beef is cooking, place cleaned, chopped broccoli in a microwave safe bowl. Add the chicken brother and cover with plastic wrap. Cook for 4 minutes in the microwave.
    3. Once ground beef is cooked completely, remove from heat and drain the grease. Return to heat.
    4. Open and drain the can of Italian tomatoes and add to the ground beef. Stir.
    5. Remove broccoli from the microwave and add to the tomato and beef mixture. Mix.
    6. Last, add the minced garlic and onion salt. Stir completely.
    7. Serve and garnish with shredded cheese!
