My son has a great science teacher that does experiments every Tuesday with his class via Zoom. I was listening in to one particular lesson and she was using a fun, easy method of making ice cream. After watching, naturally, I wanted some ice cream. I went to the kitchen and was out of luck. My nutpods coffee creamer was staring at me from the fridge and I felt inspired. A few tries later, this ice cream happened! I haven’t been able to find a yummy dessert that was Whole30 AND simple yet… and now I have. I hope you enjoy the taste and simplicity of it as much as us!
Is there Whole30 approved ice cream?
If you are a by-the-book Whole30 participant, let’s make one thing clear: You’re not supposed to eat dessert on Whole30…even if it’s made from Whole30-compliant ingredients. Regular ice cream is a big no-no because of the dairy it contains. We created this recipe for people that are adhering to the guidelines of this specific diet, but are also missing that something extra. No need to completely lose your path because you caved for non-compliant ice cream! This is a guilt-free option that keeps you in line with the acceptable food ingredients.
What does Whole30 mean?
The Whole30 program is pretty much a diet/meal plan that removes certain foods from your diet for 30 days. During the 30 days, you are to avoid sugar, alcohol, legumes, grains, dairy, and other foods which are considered inflammatory in order to βresetβ your body. A lot of people choose to make Whole30 a way of life versus a ‘diet’. It is a pretty strict regimen to follow, however tons of people are vocal about the great effects on their bodies and overall health!
Ingredients for our 2 Ingredient Whole30 Ice Cream:
- Nutpods French Vanilla Creamer
- Strawberries
- (Ice and Salt)
How to make our 2 Ingredient Whole30 Ice Cream:
First, fill a gallon-sized ziplock half full with ice. Add 1/2 cup of salt to the ice and set aside.
Next, dice your strawberries into bite-sized pieces and set aside.
Fill a sandwich-sized bag with nutpods creamer, about a cup. I ended up using half of the bottle for one serving. Then, add the diced strawberries. Zip and close tightly.
Place the small bag inside the ice bag and shake for 3-4 minutes. After shaking is done, remove bag from large ice bag and rinse quickly to get all the salt off.
Open creamer bag and pour into a bowl. **For a creamier texture, blend for 10-15 seconds with a hand-held mixer!
Enjoy!
A good variation:
If you don’t enjoy the chunks of strawberry in your ice cream, you can puree the strawberries before adding them to the creamer bag. This will still offer the same great taste and distribute the strawberry-flavor a little more evenly!
When I played competitive sports as a kid, I had a coach that always subscribed to the KISS method: Keep It Simple Stupid! This recipe has taken it back to the simplest form and made something delicious in the process! My kids even love shaking the bag and watching the liquid transform into one of their favorite desserts! Not needing a Whole30 compliant snack/dessert but still like the ease this recipe lends??
