Are green beans good for you?

You betcha’! One standard cup of green beans is only 28 calories and contain 2.6 grams of fiber. They are also a good source of vitamin C, dietary fiber, folate, and vitamin K. Green beans are a rich source of vitamins A, C, and K, and of folic acid and fiber. They contain a good amount of folate, thiamin, riboflavin, iron, magnesium, and potassium. So the short of it: yes, they are a very healthy food option!

Can I eat green beans raw?

A good things to realize, first off, is that green beans are also known as string beans. The good news is that they are indeed safe to eat raw, (fresh or frozen). Be sure to always thoroughly wash the beans before consuming. It may be confusing since some dried beans, like kidney and cannellini beans, are not safe to eat raw and must be cooked before consuming. Luckily, green beans are good to go raw or cooked!

Bake for 25 minutes. You can be finished and serve at this point if you choose. I like to turn the broiler on high and set them under it for about a minute. It really toasts up the bacon and gives it a nice crisp.

Serve and enjoy!
