It’s like a garden on a baking sheet! Our Easy Oven Roasted Vegetables are comprised of sweet potatoes, onions, broccoli, and brussel sprouts. Drizzled with extra virgin olive oil and tossed in our Fresh Simple Home Seasoning, these vegetables are simple to make and a wonderfully healthy addition to any meal.
There are so many times that I have vegetables in the house but not enough of just one type to feed my family. So I will scrounge the fridge and cupboard until I come up with a pan full. That’s how this medley came about. Now I’m intentional with the vegetables I buy because this combination offers such good flavors and has at least one thing that everyone in my family likes.
What temperature is best for roasting vegetables?
We recommend always Using high heat for roasting. To be more specific, the best temperature for roasting vegetables is between 400°F and 450°F, with 425ºF being the temperature we call for most often. This applies to all vegetables, and stays the same whether they’re fresh or frozen.
Which oil is best for roasting vegetables?
For vegetables and chicken, olive oil and ghee are our first choices for roasting at temperatures over 400°F. Not only do they help create the crispiness you crave, but each one also conveys its own unique flavor that you just don’t get from neutral oils like grapeseed or canola. They are tolerant to the higher oven temperature as well and won’t smoke.
Ingredients for Easy Oven Roasted Vegetables:
- Broccoli
- Sweet Potato
- Onion
- Brussel Sprouts
- Olive Oil
How to make:
Preheat the oven to 400 F.
Wash, dry and cut all of your vegetables. Try to make all pieces bite-size so they can go straight from the baking sheet to your plate.
Place parchment paper on baking sheet. If you don’t have any, just light grease the baking sheet. Place diced vegetables on the pan.
Lightly drizzle all of the olive oil on top. Sprinkle the FSH Seasoning evenly all over.
Lightly toss the vegetables to ensure they are all fully coated.
Place in the oven and bake for 45 minutes. Pull out and enjoy!
Since I buy fresh ingredients most of the time, a little part of me dies inside when something goes bad before we had the chance to eat it. You can alter this if needed to incorporate produce thats on its last leg in your home. I have used carrots, chunks of zucchini, regular potatoes and summer squash before. Roasting time is the same and the FSH Seasoning is great on everything!

Easy Oven Roasted Vegetables
Ingredients
- 1 large head of Broccoli
- 1 Sweet Potato
- 1 large yellow or sweet Onion
- 2 cups of Brussel Sprouts
- 1/2-1 cup Olive Oil
- 3 tablespoons Fresh Simple Seasoning
Instructions
- Preheat oven to 400 degrees.
- Chop all vegetables into large pieces. Make sure they are all similar in size to avoid over or undercooking.
- Place all veggies on a baking sheet.
- Pour olive oil and sprinkle Fresh Simple Seasoning over vegetables.
- Stir to coat all vegetables.
- Cook for 30-45 minutes turning vegetables halfway through.
- Remove from oven and serve. Leftovers will keep in refrigerator for up to 1 week.
