I feel like I am constantly trying to reinvent ways to eat chicken. Either that, or we eat chicken the same 5 ways! I wanted to give you (and myself) a different recipe with chicken that was still nutritious, simple, and easy clean up. <Insert THIS recipe>. I love the added ricotta because it not only makes the caesar dressing creamier and thicker, but adds a significant amount of protein! Another great aspect?? You can have this put together and in the oven in just 5 minutes!
What is ricotta cheese?
Ricotta cheese is a very soft, moist cheese that has a slightly grainy texture. It has a vary mild and slightly sweet flavor. It is used often in cooked dishes, but can eaten raw. Most people find cottage cheese to be an acceptable substitute for ricotta. Cottage cheese is much lumpier, but has a similar flavor.
Do I need to cover this chicken dish when cooking?
When I make this dish, I never cover it. I find that, leaving it uncovered, the cracker topping browns up perfectly and the chicken is still deliciously moist. Try to place the dish on the middle rack for an even distribution of heat. Ovens can vary on heat, so I recommend just keeping an eye on your topping for the last 5-8 minutes. If it looks to be getting too browned, simply cover for the rest of the cook time! Chicken should always be cooked to an internal temperature of 165F.

How to make our Easy Baked Creamy Caesar Chicken:
First, preheat oven to 375F. .Grease a medium-sized baking dish. Place thin-sliced chicken breasts in baking dish, being sure they do not over lap.
Next, mix the ricotta cheese and caesar dressing completely in a medium sized bowl. Then, spoon the mixture over the chicken breasts as evenly as possible. Next, spread the parmesan cheese over the mixture.
Last, mix melted butter and crushed ritz crackers together. Sprinkle on top of the parmesan cheese.
Bake, uncovered, for 40 minutes or until internal temperature reaches 165F. Remove from and serve!

- 1 Cup, crushed Ritz Crackers (about 1 sleeve)
- 3-4 Thin Sliced Chicken Breasts
- 1/2 Cup Caesar Dressing
- 1/2 Cup Ricotta Cheese
- 1 Cup Parmesan Cheese
- 2 Tablespoons melted Butter
- Garnish: Fresh Parsley
- Preheat oven to 375F.
- Grease a medium-sized baking dish.
- Place thin-sliced chicken breasts in dish, being sure they do not over lap.
