Easiest Ham and Rice Casserole

We are, apparently, one of those weird families that like Hawaiian Pizza. So the idea of making a one dish reminiscent of that was appealing! This casserole recipe is easy to make since all you are doing is adding ingredients, stirring, baking, then serving! The ham and pineapple are great flavors that the rice slowly soaks up as it bakes. This is a great recipe to utilize leftover ham as well. There is also enough to food to feed our family twice over and the leftovers are just as yummy!

What exactly is minute rice?

Minute rice is still rice. It is actually rice that has been already cooked the traditional way, and then dehydrated. That process allows minute rice to cook really fast and not need the 20-30 minutes of cook time regular rice requires. The dehydration process does deplete a lot of the nutrition the rice initially contained and changes the texture slightly.

Can I substitute regular rice for minute rice?

No. We have experimented with regular rice and it just didn’t turn out. To fully cook the rice, the ham was tough to chew and the veggies were mushy. You CAN always use pre-cooked rice and add it to the rest of the ingredients before baking. The dish will be a little more “wet” so you would need to omit the chicken broth. We feel the broth offers good flavor so it would be a bummer to miss out on that!

Ingredients for our Easiest Ham and Rice Casserole:

  • Soy sauce
  • Brown Sugar
  • Minced garlic
  • Red onion
  • Instant rice
  • Red bell pepper, chopped
  • 20oz can pineapple bits, not drained
  • Chicken broth
  • Ham

How to make our Easiest Ham and Rice Casserole:

Preheat the oven to 425F.

Spray a baking dish with cooking spray. In a large bowl, whisk together the brown sugar, soy sauce, garlic, and chicken broth. At this time, also dice the red pepper and red onion into really small pieces. If you leave them too large, they won’t bake appropriately and could be too hard.

Add uncooked minute rice, onion, bell pepper, pineapple, and hame pieces to the mixture. Stir and completely mix ingredients. DO NOT drain the pineapple – you want all those delicious juices!

Cover tightly with foil. Bake for 20 minutes. Once done, uncover and stir ingredients. Return the dish to the oven, uncovered, and bake for an additional 10 minutes, or until ham is cooked through and rice is tender.

Ingredients

  • 1/2 Cup low Sodium soy sauce
  • 1/2 Cup Brown Sugar
  • 2 cloves of minced garlic
  • 1/2 Cup Red onion
  • 1.5 Cup instant rice
  • 1 Red bell pepper, chopped
  • 20oz can pineapple bits, not drained
  • 3/4 Cup Chicken broth
  • 1 lb diced ham

Instructions

    1. Preheat the oven to 425F.
    2. Spray a baking dish with cooking spray.

    4. Add uncooked rice, onion, bell pepper, pineapple, and ham. Cover tightly with foil.
