Cheesy Corn Casserole

Bring a new holiday tradition to this years gathering with our Cheesy Corn Casserole. It’s the perfect combination of sweet, salty, and cheesy. It takes less than five minutes to put together and then just throw in the oven for 45 minutes – it’ll be on your table in no time!

This casserole is one that is always served on holidays. This dish is requested by my kids and husband. It also makes for delicious reheated leftovers. It is creamy and cheesy but also very light. It’s not going to sit heavy in your stomach. When I know that I don’t have the time to make a really involved recipe, this one always comes to mind. I can whip it together and take a quick shower and get ready while it’s baking. It’s not fussy and always turns out right! Plus – it’s super tasty!

Can I make this ahead?

Yes! This is a great make ahead dish! You can make this and store in an airtight container in the refrigerator for up to 48 hours before cooking!

Do I have to use Velveeta?

I know not everyone likes to cook with Velveeta since it is not exactly the healthiest of options! We recommend this blog recipe if you would like to whip up some of your very own homemade Velveeta!

Can I freeze this dish?

Absolutely! We recommend that you freeze it before cooking. Place in a freezer safe container with an airtight lid and it will keep for up to 3 months. When you are ready to cook, bring it out of the freezer and allow to thaw. Then cook according to normal directions!

Ingredients for Cheesy Corn Casserole

Ingredients for Cheesy Corn Casserole:

  • 2 Cans of Corn (15.25 ounce cans)
  • 2 Cans of Creamed Corn
  • 4 oz Shredded Cheddar Cheese
  • 4 oz Velveeta Cheese
  • 2 Cups Crushed Oyster Crackers
  • 2 TBS Melted Butter
  • 4 Eggs, beaten

How to make our Cheesy Corn Casserole:

Preheat oven to 350 F.

Pour 2 cups of oyster crackers into a gallon-sized bag and crush. I using a rolling pin because it makes the job go quickly. Once crushed, set the crackers aside.

Place the rest of the ingredients in a bowl and mix thoroughly. Add crackers last. Stir all the ingredients together and completely combine.

Once mixed, pour the contents into a greased baking dish. Spread evenly. Bake for 60 minutes. Stir just before serving to combine all the melted cheese.

Cheesy Corn Casserole

Prep Time: 10 minutes
Cook Time: 1 hour
Total Time: 1 hour 10 minutes

Ingredients

  • 2 Cans of corn
  • 2 Can creamed corn
  • 2 Cup Oyster crackers, crushed
  • 6 Eggs
  • 4 TBSP Butter
  • 4 oz Velvetta
  • 4 oz Cheddar Cheese

Instructions

  1. Preheat oven to 350 F.
  2. Crush oyster crackers in a bag and set aside.
  3. Combine all ingredients in a bowl and mix. Add crackers last and stir.
  4. Pour contents into a greased casserole dish.
  5. Bake for 60 minutes.
  6. Stir and serve!

  • Thank you for leaving an option for Velveeta cheese… did you know I would be asking for that?! Great recipe that has been added to my Holiday dinner menu!

  • If I want to make this for a larger crowd, could I just add a couple of extra cans of corn, or would I need to double every ingredient?

    • You would need to double all the ingredients. If you are using a wider dish, like a casserole dish, the cook time should be similar. However, with more ingredients, you may need to cook a little longer. Once the center of the dish is no longer jiggly, it is ready to come out. I often double this dish and it is delicious!
