Why is some pita bread soft and others not?


There are actually two different types of pita bread…pita pockets and Greek pita bread. The pita pocket bread is usually a bit thinner and not as soft as Greek Pita Bread.

Is this chicken Souvlaki?

While this recipe is not technically Souvlaki, it is certainly a wonderful substitute! Souvlaki is traditionally meat and/or veggies that are grilled on skewers. This tender, juicy chicken is seasoned and cooked in olive oil. We like to go ahead and chop the chicken to make assembling your pita, salad or bowl as easy as possible!

  • Chicken
  • Greek Seasoning (we really like this one)
  • Greek Pita Bread
  • Romaine Lettuce
  • Tomato
  • Cucumber
  • Red Onion
  • Kalamata Olives
  • Feta Cheese
  • Hummus
  • Tzatziki

How to make our Ultimate Greek Chicken Platter

First, season thin sliced chicken breasts with Greek seasoning. You can use as much as you would like, depending on how flavorful you would like. We recommend about 1 tsp per side.

Next, cook chicken for 4-5 minutes on each side, until fully cooked. If you are not using thin sliced chicken, you will need to cook longer. Once cooked, set aside on a plate or cutting board.

While chicken is resting, dice your favorite toppings. We suggest romaine lettuce, red onions, tomatoes, cucumber and kalamata olives. Then chop the cooked chicken into bite sized pieces.

Arrange all toppings on a large platter or charcuterie board. Add pita bread, crumbled feta, and in small bowls, place hummus and tzatziki on platter.

To serve, choose if you would like to make a salad, bowl or pita. Add desired toppings and enjoy! My favorite way to eat this is as a salad with the tzatziki drizzled on top with a side of hummus and pita- best of both worlds! Sometimes I even add an olive oil/red wine vinegar mixture as a salad dressing as well.

Ingredients

  • 3-4 boneless, skinless chicken breasts
  • 4 TBS Greek Seasoning
  • 8 slices Greek Pita Bread
  • 2 cups shredded Romaine Lettuce
  • 2 Tomatoes
  • 1 large Cucumber
  • 1 large Red Onion
  • 1 cup Kalamata Olives
  • 1 cup Feta Cheese
  • 1 cup Hummus
  • 1 cup Tzatziki

Instructions

Roasted Balsamic Mushrooms

Roasted Balsamic Mushrooms

4 ingredients, 10 minutes, and these beautiful Roasted Balsamic Mushrooms are skewered and grilled to perfection! The balsamic vinegar adds a perfect amount of flavor and is enhanced by the garlic and lemon juice. These are such a simple go-to when you need something special on a busy night!

I am one of the people that LOVE mushrooms. It is honestly so hard to mess up a mushroom to me. I will eat them baked, fried, grilled, sautéed…any way! I really enjoy this preparation because the balsamic is a very distinct flavor that goes so well and just gives them something “extra”. It takes no time to put together and my daughter loves helping me skewer them. I prefer a little more char on my mushrooms, so I let them roast a little longer. My husband doesn’t, so I pull his off in 3 minutes and we both get what we want!

Do you have to cut the stems off of mushrooms?

You don’t HAVE to because mushroom stems are edible. With smaller mushrooms, it is easy to just pull of the stem to separate it from the cap. With larger ones, pulling off the stem sometimes damages the cap — either the cap breaks or a chunk of the soft flesh comes off with the stem. Some people feel the stems are “woody”, but with this particular recipe and this type of mushroom (baby bellas), you don’t need to!

Why should you never wash mushrooms?

The tissue of the mushroom is very delicate: it tears very easily. If you submerge them in water, they are really just absorbing the water and impurities. With mushrooms, dried is better. The best thing to do it gently wipe them with a wet cloth before cooking if needed.

Ingredients for our Roasted Balsamic Mushrooms:

  • 1/4 C Balsamic Vinegar
  • 2 TBSP Soy Sauce
  • 1 TBS Garlic, mined
  • Black pepper to taste
  • 1 LB Bella Mushrooms
  • Parsley, for garnish

How to make our Roasted Balsamic Mushrooms:

First, in a large bowl, whisk together the balsamic vinegar, soy sauce, garlic, and pepper.

Next, add the mushrooms and marinate for 20 minutes.

While you are putting the mushrooms on skewers, heat the skillet on medium-high.

Skewer mushrooms and grill 2-3 minutes per side. Once the mushrooms are browned, turn off the heat.

Last, drizzle lemon juice overtop of the skewers. Garnish with chopped parsley and then serve warm!

These turn out so well when all is said and done! A huge plus is that I always have balsamic vinegar, garlic, and lemons on hand! Prep time is minimal and they cook up really fast. My kids enjoy their little “mushroom sticks” as they call it, so it makes it fun for them to eat! This is a great recipe to whip up when you just want something a little different then your typical mushroom side!

  • 1/4 C Balsamic Vinegar
  • 2 TBSP Soy Sauce
  • 1 TBS Garlic, mined
  • 1 LB Mushrooms
  • Parsley, for garnish

Instructions

    1. In a large bowl, whisk together B.V., soy sauce, garlic, and pepper.
    2. Add mushrooms and marinate for 15-20 minutes.
    3. Heat the skillet to medium high.
    4. Skewer mushrooms and grill 2-3 minutes per side.
    5. Garnish with Parsley and then serve.

My kids have always enjoyed helping me in the kitchen. Often, the two of them want to “surprise” my husband and I with a “fancy” dinner that they make all by themselves. If you are anything like me, just the thought of them in the kitchen by themselves gives me pause to wonder if the concoction they come up with will even be edible! We came up with these easy, broiled crab cakes as a way to give them independence and give my husband and I dish to look forward to- a win win! The best part- these are so good I find myself whipping these up even when they aren’t setting the menu for a fun date night in appetizer!

What is lump crab meat?

Lump crab comes from the back and body of the crab along the muscles. When this is removed from the crab it typically pulled off in lumps, which is where the name comes from!

Can I fry these Crab Cakes?

Definitely! If you prefer to fry this recipe, simply add 1/4 cup of your favorite cooking oil (we like Olive Oil or Avocado Oil) over medium heat to a small frying pan and cook each crab cake for 2-3 minutes on each side, or until they have a light golden color.

I don’t like cocktail sauce, what can I dip these in?

If you don’t like the taste of cocktail sauce or would prefer another sauce to accompany these tasty bites, we love this recipe from The Spruce Eats for a great alternative.

  • 1 egg
  • 1 tsp salt
  • 1 TBS worchestershire
  • 1 1/2t chopped parsley
  • 1 TBS baking powder
  • 1 T mayonnaise
  • 1 T butter, melted
  • 6 crackers, crumbled

How to make our Easy Crab Cakes

In a medium sized bowl, combine all ingredients.

Next, mix well but be careful not to break the crab meat apart too much. The large lumps throughout the crab cake are the best part!

Form mixture into small patties, about 2 inches (a small handful) and place on a baking sheet.

Then, broil in oven for 10 minutes, or until golden brown, turning halfway through.

Finally, remove from broiler and serve with your favorite dipping sauce or along side of a delicious steak and enjoy!
