Toss it on a Breakfast Banana Split or mix it in with a Chia Parfait to get the best homemade breakfast ever! Throw it in a bowl with some milk and there is your cereal. The possibilities are endless!
We are big granola consumers in our house. We would buy a lot of it and often. Our kids like to munch on it and we like to dress up otherwise mundane things. We decided to make our own so we could control what was in it. This recipe is a much healthier option because we make it with whole grains and it is naturally sweetened. Did we mention that it’s also super easy to make? All you need is a mixing bowl and a few pantry staples!
Can I substitute quick oats for rolled oats in granola?
Yes! Rolled oats are most commonly used in granola bars, cookies, muffins, and other baked goods. Instant oats can be used in place of rolled oats, although the cook time will be much less, and the final dish might not have as much texture. Sometimes, when in a pinch, I will substitute quick oats, but my family far prefers old fashioned oats.
How long will homemade granola last?
Granola can be stored in an airtight container, in a cool, dry place for six months… sometimes longer! You can also freeze granola and granola bars just as you would cookies or other treats: wrapped tightly in plastic wrap and/or in resealable freezer bag.
Ingredients for Sweet and Simple Granola:
- Old Fashioned Rolled Oats
- Sweetened Coconut Flakes
- Vegetable Oil
- Vanilla Extract
How to make our Sweet and Simple Granola:
Preheat the oven to 350 F. Measure out the oats and add to a large mixing bowl. Next, pour in the sweetened coconut flakes. Stir until fully combined. Add in both the oil and the honey to the dry mixture. Mix completely.
Next, line a 9×13 (or larger) baking sheet with parchment paper or a silicone mat. You want to do this step so that the honey doesn’t stick to the bottom of your pan. You will need to be mixing the granola a few times while baking and you’ll want the oats to move about freely. Plus – it makes clean up so much easier!
Next, spread the granola evenly on the parchment paper and put it in the oven. Set a timer for 45 minutes. You will want to stir the mixture every 10-12 minutes throughout the baking process so that everything cooks evenly. Once 45 minutes is up, you will notice how golden brown it has become. Pull from the oven and allow it to cool completely. Once cooled, place in an airtight container and enjoy!
One of our favorite parts about cooking and creating recipes is the ability to make something that leaves some room for alterations. This is a recipe that you can tailor to your specific likes: use maple syrup instead of honey, use coconut oil, throw in some dried fruits to fancy it up, or add cinnamon and nutmeg to give it more flavor! - 4 cups old fashioned rolled oats
- 2 cups sweetened shredded coconut
- 2 cups sliced almonds
- 3/4 cup vegetable oil
- 1/2 cup honey
- Preheat oven to 350.
- Toss the oats, coconut and almonds together in an extra large bowl.
- Whisk together oil and honey in a small bowl.
- Pour the liquids over the oat mixture and stir until oats and nuts are coated.
- Pour into a large baking sheet or jelly roll pan (best if pan has sides- easier for stirring)
- Bake, stirring occasionally with a spatula until the mixture turns a nice golden brown color, about 40 minutes. Keep a close eye on it, it will brown easily!
- Remove from oven and allow to cool completely, stirring occasionally.
- Store in an airtight container.

There is nothing I hate more than getting my tiny humans up, dressed, and fed on school mornings and then turning around and trying to figure out what I can eat. I’d like to say that I’m super efficient with time and a great pre-planner but then I would be fibbing. This easy Oatmeal on the go has been my saving grace since I’ve been trying to get back into healthy eating habits and trying not to skip that all important breakfast just because I hit snooze an extra time… or four!
Can you make overnight oats for the week?
Just like you pack salads for the week, you can save time every night by prepping five days of overnight oats. All you need are mason jars, some basic ingredients, and an under-300-calorie super filling breakfast will be waiting for you every morning.
- 1 Cup Rolled Oats
- 1 Cup Milk
- 1TBS Honey
- 2 tsp vanilla extract
- 1/4 Cup Blueberries
- 1 tsp Cinnamon Powder
How to make Simply Healthy Overnight Oats:
Measure out 1 Cup of oats and with a funnel or pouring delicately, add them to the bottom of a clean mason jar.
Add 1 cup of milk. (We use whole milk.) Pour in 1 TBS of vanilla extract, 1tsp of cinnamon powder, and 2 tsp of honey.
Screw the top on your jar and give it a really good shake for 10-15 seconds.
Place them in the refrigerator. You want them to set at least 6 hours so we fund these are mostly useful when made the night before. They are good about 3-5 days… Timing will really come down to how long you had on your milk before it expired.
Bottom line, sometimes it’s tough to make breakfast a priority and a healthy one at that. I know about anyone else but this girl loves her some sleep. The later I can push it, the later I will. The mason jar fits right in my cup holder and is super easy to eat while quizzing my kids on their spelling words as we head to school. Its also incredibly filling and holds me over great until lunch! Grab and go’s are just the best, aren’t they?
- 1 Cup Rolled Oats

One day, Ashley and I were cooking and we made a dish that we initially called our chicken bombs. Butttt… we didn’t think that name portrayed exactly what they were so we renamed them Bacon Ranch Chicken Tenders to be more exact. Once we made them, we realize that something was missing that could really complete the taste of the dish for us. Well, Voila… the Avocado Ranch Dip became a thing. Once we made it, we quickly realized how versatile it was and on how many different things we could use it on. One of the best parts is that it comes together in less than 5 minutes!
Can I use Avocado Ranch Dip as a salad dressing?
Absolutely! You can definitely use it as a salad dressing. The best way to add to a salad is to pour your desired amount on top of your salad in a container with a lid and give it a good shake- it will perfectly cover every bite! 🙂 If you want to thin it out a bit for your salad, you can mix in a little bit of olive oil and it will give the Avocado Ranch Dip a more traditional dressing consistency.
Is it OK to eat avocado everyday?
Eating an avocado a day is overall good for your health. Avocados are nutritious and they are a good source of monounsaturated fat, which can reduce your risk of heart disease.
Ingredients for Avocado Ranch Dip:
- Ranch Dressing
- 2 avocados
- 2 limes
- Taco seasoning
How to make Avocado Ranch Dip:
Take both avocados and slice length-wise. Take out pit. Spoon contents of both into a bowl.
Wash and dice the cilantro into small pieces. Add to the bowl.
Next, measure out the ranch dressing and add to the mixing bowl.
Lastly, add taco seasoning and the juice of two limes to all other ingredients.
With an immersion blender or regular blender, mix until all ingredients are combined. For a smoother texture, blend until all avocado chunks are gone.
In our house, we are quick to grab the ranch to throw on just about anything. With this specific dip, we wanted to dress up the ranch, make it thicker, and give it a lot more personality. It has a rich consistency and gives a great custom taste to those cut vegetables trays or on top of fish tacos. When you are feeling like dressing up that next tray of goodies, whip this baby up in five minutes or less!
- 1/2 Cup Ranch Dressing
- 2 avocados
- 2 limes
- 1/4 Cup Cilantro
- 2 TBS Taco seasoning
- Cut up avocados and add to a mixing bowl.
- Wash and dice cilantro. Add to the bowl.
- Measure ranch and add.
- Cut limes in half and add to the ingredients.
- Lastly, add the 2 TBS of taco seasoning.
