Delicious on yogurt, in cookies, breads, muffins or just eaten raw, this granola is addicting in all the right ways! Toss it on a Breakfast Banana Split or mix it in with a Chia Parfait to get the best homemade breakfast ever! Throw it in a bowl with some milk and there is your cereal. The possibilities are endless!

We are big granola consumers in our house. We would buy a lot of it and often. Our kids like to munch on it and we like to dress up otherwise mundane things. We decided to make our own so we could control what was in it. This recipe is a much healthier option because we make it with whole grains and it is naturally sweetened. Did we mention that it’s also super easy to make? All you need is a mixing bowl and a few pantry staples!

Can I substitute quick oats for rolled oats in granola?

Yes! Rolled oats are most commonly used in granola bars, cookies, muffins, and other baked goods. Instant oats can be used in place of rolled oats, although the cook time will be much less, and the final dish might not have as much texture. Sometimes, when in a pinch, I will substitute quick oats, but my family far prefers old fashioned oats.

How long will homemade granola last?

Granola can be stored in an airtight container, in a cool, dry place for six months… sometimes longer! You can also freeze granola and granola bars just as you would cookies or other treats: wrapped tightly in plastic wrap and/or in resealable freezer bag.

  • Old Fashioned Rolled Oats
  • Sweetened Coconut Flakes
  • Vegetable Oil
  • Honey
  • Vanilla Extract

How to make our Sweet and Simple Granola:

Preheat the oven to 350 F. Measure out the oats and add to a large mixing bowl. Next, pour in the sweetened coconut flakes. Stir until fully combined. Add in both the oil and the honey to the dry mixture. Mix completely.

Next, line a 9×13 (or larger) baking sheet with parchment paper or a silicone mat. You want to do this step so that the honey doesn’t stick to the bottom of your pan. You will need to be mixing the granola a few times while baking and you’ll want the oats to move about freely. Plus – it makes clean up so much easier!

Next, spread the granola evenly on the parchment paper and put it in the oven. Set a timer for 45 minutes. You will want to stir the mixture every 10-12 minutes throughout the baking process so that everything cooks evenly. Once 45 minutes is up, you will notice how golden brown it has become. Pull from the oven and allow it to cool completely. Once cooled, place in an airtight container and enjoy!

One of our favorite parts about cooking and creating recipes is the ability to make something that leaves some room for alterations. This is a recipe that you can tailor to your specific likes: use maple syrup instead of honey, use coconut oil, throw in some dried fruits to fancy it up, or add cinnamon and nutmeg to give it more flavor! Sweet and Simple Granola

Ingredients

  • 4 cups old fashioned rolled oats
  • 2 cups sweetened shredded coconut
  • 3/4 cup vegetable oil
  • 1/2 cup honey
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350.
  2. Toss the oats and coconut together in an extra large bowl.
  3. Whisk together oil and honey in a small bowl.
  4. Pour the liquids over the oat mixture and stir until oats and nuts are coated.
  5. Pour into a large baking sheet or jelly roll pan (best if pan has sides- easier for stirring)
  6. Bake, stirring occasionally with a spatula until the mixture turns a nice golden brown color, about 45 minutes. Keep a close eye on it, it will brown easily!
  7. Remove from oven and allow to cool completely, stirring occasionally.
  8. Store in an airtight container.

Whenever possible, we try to keep things fresh because that’s just our typical preference. However, that doesn’t mean we don’t peruse the precooked section at times! We came across this package of shredded chicken and it has become a life saver. When I get home from substitute teaching at 4:00 and have to be at soccer at 5:30, there isn’t a whole lot of time to whip together a lot of meals. *THIS* recipe makes me feel like I’m making a great dinner on the go thats flavorful and unique while simple and stress-free!

What side dish goes with buffalo chicken?

There are so many different sides you can use to pair with our Shredded Buffalo Chicken Tacos. Some of our favorite side dishes include baked potatoes, onion rings, steamed green beans, homemade macaroni and cheese, our chickpea and edamame salad, baked beans, pasta salad, and french fries. Options….oh the options!

Why do they call it buffalo sauce?

This tasty item originated in Buffalo, New York with most foodie historians indicating buffalo wings probably were first served in the Anchor Bar there. A couple named Frank and Teressa Bellissimo owned that bar, which they had purchased in 1939. Buffalo wings are traditionally served hot, along with celery sticks and carrot sticks with blue cheese dressing for dipping.

  • Pulled Chicken
  • Tortillas
  • Ranch Dressing
  • Sharp Cheddar Cheese
  • Frank’s Buffalo Sauce

How to make Shredded Buffalo Chicken Tacos:

Heat the chicken according to the directions on the box.

Once cooked, pour into a bowl and shred with two forks.

Next, pour Frank’s Red Hot Buffalo Sauce all over the chicken. Mix thoroughly.

Spread a layer of blue cheese dressing on your tortilla. You can also use ranch if you prefer! Pile high with desired amount of meat and top with sharp cheddar cheese.

It’s always to nice to have a recipe in your arsenal that gets you through the time-crunch you sometimes find yourself in. This is the one! Although it is easy and quick, you don’t have to sacrifice delicious flavors. Best part is that you can tailor the toppings to your own tastes. Shredded Buffalo Chicken Tacos

Shredded Buffalo Chicken Tacos

Ingredients

  • 1 package Precooked Pulled Chicken
  • 6 Flour tortillas
  • 1 cup Sharp Cheddar Cheese
  • 1/2 cup Ranch or Blue Cheese Dressing
  • 1/2 - 1 cup Frank's Buffalo Sauce

Instructions

  1. Warm chicken according to directions on package.
  2. In a bowl, shred chicken and pour Frank's Buffalo Hot Sauce over chicken (about 1/2-1 cup). Stir.
  3. On a tortilla, spread a layer of blue cheese dressing You can also use ranch if you prefer!
  4. Add desired amount of meat
  5. Top with cheddar cheese.
  6. Serve immediately with a side of celery and carrots.
  7. Enjoy!

Ashley and I were talking one evening about some of our families favorite things to eat. Common ingredients that kept coming up were chicken, bacon, and ranch. So we decided to combine the three and these do not disappoint! These are great as either a main dish or as an appetizer for whatever event is next on the calendar. We typically pair these with our avocado ranch dip. All the flavors marry so nicely and lend to a wonderful palate-pleaser.

Are chicken tenders and chicken fingers the same thing?

Chicken tenders are a specific muscle, located in the breast next to the ribs. Chicken fingers are breaded and either fried or baked. They are not made from whole pieces of chicken. They’re bits and pieces of chicken meat stuck together with meat glue and formed into regular shapes, so they will cook evenly.

Ingredients for Bacon Ranch Chicken Tenders

Ingredients:

  • 1 Cup Ranch
  • 2.5 LBS Chicken Tenderloins
  • 1 LB Bacon

How to make our Bacon Ranch Chicken Tenders:

Preheat oven to 350 F.

Pat chicken tenderloins dry. Be sure they are thawed, not frozen.

Dredge chicken in ranch, fully covering the entire exterior of the meat.

Starting at the top end of the chicken, wrap the bacon around the tenderloin. Once wrapped, lay in a baking dish, with the ends of the bacon face down as much as possible.

When dish is full, bake in the oven for 30 minutes.

Once time is up, carefully remove dish from the oven and drain as much of the liquid as possible.

Turn the broiler on high or 500 F.

Put dish back into oven on the middle rack, and back for 3-5 minutes. Watch carefully. This is where you are crisping up the bacon. Over-cooking can lead to burning!

Once the bacon is nice and brown, pull out and let rest for 5 minutes.

Serve!

The first time we made this, we figured that you can’t really go wrong. I mean, there’s bacon… and ranch. It’s GOTTA taste good. It’s simple, quick and the ingredients are something we always have on hand. Be sure to make our Avocado Ranch Dip because the combination of the two is ah-mazing!

  • 1 Cup Ranch
  • 2.5 LBS Chicken Tenderloins
  • 1 LB Bacon

Instructions

  1. Preheat oven to 350 F.
  2. Pour ranch in a shallow dish. Grease casserole dish for baking.
  3. Dredge thaw, raw chicken tender through the ranch and completely coat.
  4. Wrap in bacon, starting at one end of the tender and wrapping toward the opposite end.
  5. Place in dish. Repeat for remaining ingredients.
  6. Bake for 30 minutes.
  7. Remove from oven and drain fluid from pan by using a deep spoon.
  8. Place back in oven, under the broiler on high heat.
  9. Allow bacon to crisp up for 3-5 minutes.
  10. Keep a close watch so they don't burn!
  11. Remove from oven and enjoy!
